Russian-born beauty shares her biggest
career moments, off-duty tips and
beauty tricks. Meet Valerija Erokhina.
Growing up in Russia, did you always aspire
to be a model or was it something that came
about for you when you were discovered?
Growing up, being a model never crossed
my mind. I wanted to learn languages
and be an interpreter. I had definitely
heard about the big supermodels of
the 90s but I don’t think I understood
that it was a real profession. You’ve worked with the likes of Australian
designers Camilla & Marc, Alex Perry
and Lover and also graced the front
cover of Vogue… what is your favourite
moment in your career so far?
The most special moment would have
to be the Vogue cover. It was such
an honour and a big surprise too.
Shooting for Italian Vogue in New York
was a massive highlight as well. What is it about a career in
fashion that you love?
I love the feeling you get when you go
to a big casting and don’t think you have
a chance but end up getting the job. I
love how you never know what’s around
the corner and I really enjoy getting my
makeup done. I find it totally relaxing. Has anything caught your eye for the
upcoming season… what is on your
Autumn Winter shopping list?
The leather Scanlan Theodore dress
we shot for Indooroopilly Shopping
Centre. I didn’t want to take it off! I
just bought a long, silky trench coat
from Sportscraft too. I had been
looking for one for a very long time. Describe your style off-duty?
Very comfortable and casual. I spend
a lot of time in my exercise gear
on my days off. No makeup!
When you travel, what are the must-have
beauty essentials you can’t live without?
A good cleanser and face scrub for
dealing with oily skin. I am currently
using SK-II Facial Treatment Gentle
Cleanser. I also buy sample sachets of
coconut oil from my local health food
shop and use it as body moisturiser. You work in such a fast paced industry,
how do you relax in your own time?
I read a lot and try to meditate if I’m
feeling super overwhelmed. I love
baking and exercise in the morning.

Carla Zampatti leads Australian fashion with determination and grace.
This year she celebrates her 50th anniversary in the fashion industry.
Congratulations on 50 years of fashion,
a wonderful achievement. How has your
signature style evolved over the years?
What is the best thing about being
a fashion designer in 2015?
It has been wonderful to look through
my archive of images over the past
year as we have been editing for a
book that will be published later in
the year. What is interesting is that
the style of my designs have not
altered that much but it is the style
of photography and accessories
that has changed dramatically.
Dressing women of all ages for their
busy lives. Whether it be work, a
lunch, a cocktail party, a red carpet
occasion or even that special day,
her wedding. Also I love that I work
in an industry that allows me to
create beautiful collections every six
months for women that gives them
confidence to achieve their dreams.
What are some of the major changes
you have seen in the industry?
What is the Carla Zampatti ‘IT’
look for Autumn Winter?
Competition has been a major
change in the industry. We used to
only compete with other Australian
designers. Today we compete not only
with new retailers but also the online
international business. It is great, as
it ensures that brands are focused on
their business, designs and customers.

What have been some of your
personal highlights?
The Ford Laser vehicle I redesigned
was a game changer in the automobile
industry. Though recently Princess Mary
of Denmark chose to wear again, one of
my gowns that I made for The Australian
Women’s Weekly shoot in 2013 for
the Royal Palace 2015 official photo. The word ‘classic’ is often used to describe
a Carla Zampatti design. What do
you think defines a classic look?
With my designs it is about
a certain style - style never
dates - I prefer it to classic.

Sisters Gabrielle, Cheryl and Vanessa
Manning have the kind of design
clout that can make even the most
classic of vintage inspirations
look thoroughly modern.
More than just updating the ubiquitous
mule, purveyor of party dresses,
Nicky Zimmermann has produced a
shining collection that picks up on the
influence of tarot cards, birth stones
and mystery in a stunning array of
lace, leather and jacquard pieces.
Inspired limitlessly by nature, art,
music and history, the Manning Cartell
Autumn Winter ‘Games of Scale’
collection touches on themes from
the 1920s and 30s, referenced in retro
florals and graphic contrast prints.
“I wanted to create a collection that was
airy, light and had plenty of movement.
It was from this starting point that I was
led to the astrological inspiration, and
all of the rich imagery and references
that evokes,” said Zimmermann.
Clever cuts incorporate futuristic
fabrics that bring inspiration
from almost a century ago into
an era where sportswear crosses
fashion - an intersection that’s a
path increasingly well travelled.
Sun and moon elements,
geometric constellation prints
and lashings of gold are the
inspiration behind Zimmermann’s
Autumn Winter collection.
“We have a curious obsession
with the past and the present and
we are constantly researching for
new and innovative fabrics and
technology; that’s what we see as
truly modern,” says Gabrielle.
A contrast of feminine and masculine
influences shrouded in delicate lace
and metallic threads, sees sleek pant
suits paired with airy lace pieces in
tones of teal, peach and wisteria blue.

components add the street
element, structure and form.”
Perforated mesh and bonded jersey
lend a sporty edge to feminine cutaway tops and midi-length pencil
skirts, while extra texture can be
found in boucle jackets, wool felt
coats and stretch leather pieces.
“We have always been drawn to
fabrics, print and colour and this is
still the formula for us,” says Gabrielle.
The designers’ firm belief in
producing in Australia, despite its
ethical value, enables Manning Cartell
to offer a made-to-order range which
can be created specifically for a
customer within four to six weeks.
The bespoke service is now available
at Indooroopilly Shopping Centre.

WITH CAMILLA FRANKS
Incorporating a heavy mixture
of ancient Mayan and Aztec
culture as well as Mexico’s sights,
smells and hues, Autumn Winter
at Camilla sees gods, warriors,
fiestas and folklore reinterpreted
in cultural and spiritual motifs
across the richly coloured and
highly embellished silks that have
become her design signature.
On a sunny afternoon in Mexico,
designer Camilla Franks fulfilled
a lifelong dream: visiting
the house that belonged to
bohemian artist Frida Kahlo, one
of her greatest inspirations.
Kahlo lived outside Mexico City
in La Casa Azul. Following her
death in 1954, it has become a
shrine to the memory of a woman
whose dramatic, dream-like
symbolism continues to inspire
likeminded creatives to this day.

“The Road to the Blue House
reflects the ancient Mexican
cultures, mythical creatures,
fiestas and their incredible
history of folklore,” says Camilla.
While many of the pieces feel
almost weightless, the artisanal
touches of heavy beading and
embroidery handcrafted in India
in others create embellished
works that are destined to

The focus is still on the
modern man – razor sharp
tailoring with beautiful details.
There is still a strong nod
to leather but suede is also
having a comeback and we
are still seeing light knits in
both sweater and cardigan
styles. Simple, classic styles
with highlights in accessories,
ties and pocket squares.
What’s your take on
suiting this season?
There is a strong focus on
three-piece suiting this season,
in many shades of grey and
the ongoing highlights of
navy which has been a strong
colour for the last few seasons.

Born in the 1700s, the
three-piece, consisting of
a jacket, trousers and
waistcoat, fell away after
the fabric shortages following
the Second World War but
style-wise, is currently enjoying
somewhat of a resurgence.
Is the double-breasted
suit still a favourite?
Double-breasted is still a
feature but we are continuing
to see strength in the modern
classics such as the two
button suits in a beautiful
Prince of Wales check. Men
are also starting to mix up
the suits and wear more
separates such as a strong
trouser and blazer option that
can show versatility from the
workplace to the weekend.
Do you have any advice for the
Brisbane man this season?
Bold and paisley patterns
are the general rules to liven
things up. Patterns in the suit
or a great combination of
a patterned jacket and slim
trouser work best. Check
shirts work better than plain
and it never hurts to put
some colour into your tie
and pocket square. Don’t
be too matchy matchy
but always be confident
in your combinations.

Classic minimalism
Minimalism is continually reinvented and
this season features a more refined palette.
Look for soft hues such as dusk blue mixed
with metals and natural materials, accented
with graphic artwork. While graphic art
pieces will continue to be a mainstay, refrain
from the generic patterns of chevron and
diamond shapes and opt instead for a more
organic approach. Done correctly with big
bold pieces and a less is more approach,
this will create a strong minimalist
look that will stand the test of time.

The Mero Kitchen & Bar has an impeccable
pedigree and a please everyone menu,
from appetisers such as truffle and
porcini arrancini to a tender salt bush
lamb shoulder to share. As the weather
cools, it’s the perfect time to try autumnal
favourites like roasted bone marrow with
parsley, capers, anchovy and ciabatta or
a rustic Sardinian seafood fregola stew.
The courtyard, with its colourful cushioned
banquettes is a cosy place to indulge in a
leisurely lunch even on cool winter days.
Nantucket Kitchen & Bar
If you’ve ever been lucky enough to have
tried real Cape Cod crab cakes, this is the
place to come to relive the experience,
especially good paired with a glass of crisp
Riesling. While Brisbane diners are now
au fait with the cuisine of America’s east
coast, you are warned to pace yourself.
The charcoal grill fires up daily, with
premium steak, lamb, chicken and more.
A piece of apple, cherry or blueberry pie
with a scoop of vanilla bean ice cream is a
delicious winter treat and essential finish.

‘Irasshaimase!’ This is the shouted greeting
the energetic staff from waiters to kitchen
staff will greet you with as you enter.
Harajuku models itself on typical Japanese
izakaya (pub) and follows the premise of
doing just a few things but doing them
extraordinarily well. Beer and Japanese
dumplings (gyoza) are its forte; the Kirin is
on tap, the pan-fried gyoza, crisp bottomed
and juicy are among the city’s best. They
even come in sweet varieties, with peanut
butter and white chocolate gathering a bit
of a cult following. Don’t restrict yourself
to dumplings though; the kaarage chicken
and agedashi tofu are both excellent too.
OlÉ Fuego
The word ‘tapa’ means lid and originally
referred to a slice of sausage that bar
owners would put over drinks to keep the
flies out in rural Spain. Eventually these ‘lids’
became more elaborate and the tradition
of tapas was born. The menu at Olé Feugo
offers a range of smaller ‘tapas’ for one and
larger ‘raciones’ made to share; from jamon
from the famous black footed pigs, to daily
croquettas and paella. Keep warm watching
the flames shooting skyward and the paella
dancing about in the pans, with a jug of
Sangria, in tinto (red) or blanco (white).

Today more than seven million tonnes of chocolate is consumed worldwide each year and
the number of artisan chocolatiers are proliferating in response to this great interest.

to discover the essence of
chocolate and created the start
of their chocolate signature.
What’s your philosophy
at Koko Black?
To go for your dreams, which will
make anything possible. We want
to create and be part of something
special, beyond the everyday.
How can people differentiate
good from bad chocolate?
Everyone has a different
preference - white, milk or
dark? How dark? There is so much
more to it but every sense has
a role. Ultimately it is the taste
which is the quality and freshness
of ingredients going back to the
bean. A very important factor is
the velvet texture critical in the
refining stage of manufacturing. How long should you keep chocolate
for and how should you store it?
We have truffles that have a total
shelf life of four weeks. A plain
blend of chocolate is okay for 12
months but it’s always best to eat
as soon as possible. Try not to
store chocolate in the fridge but
if you have to, place in an airtight
container and bring back to room
temperature before eating which
will help release all the flavour. Do you change flavours seasonally?
As a chocolate company we cater
for all seasonal events which
means many seasonal products
and flavours. This year for Easter
we are making Easter eggs with
inclusions of salted cashew nut
brittle and another version with
Tasmanian Leatherwood honey. They are not like any egg you
have experienced before.
How do you develop new flavours?
Mostly from our team of chocolatiers
but it can come from anywhere. M&M
is the most popular chocolate
product on the planet which is
sugar and chocolate so sometimes
you have to not over think it.
What about your hot chocolate?
Can we make it at home?
Our hot chocolate is brewed for
two hours on a daily basis which is
about achieving a velvet texture. This
isn’t practical for home so we sell
an at home pack with a simplified

FABULOUS FLAVOUR
Chorizo is a coarse Spanish pork sausage flavoured with garlic and
smoked paprika, which gives a red colour and smoky, slightly spicy
flavour. Cabassi & Co Artisan Butchers handcraft their soft-style
chorizo from premium Bangalow Pork, smoked paprika and
confit garlic. This one pot dish is easy to prepare and is
perfect for cooler autumn nights.

INGREDIENTS
METHOD
250g Cabassi chorizo
Heat large saucepan or
cassoulet dish on low and fry
chorizo until oil is released.
Add onions and leek and
cook until they soften. Add
chilli garlic and sugar.
2 red chillies, seeded
and finely chopped
1 leek, chopped
4 cloves garlic, chopped
2 tsp brown sugar
840g (2cans) 4 bean mix
420g crushed tomatoes
400ml chicken stock
3 tbsp fresh, rosemary,
parsley, thyme, chopped

Pomegranate
About the size of a large apple and packed
with anti-oxidants; pomegranates have a hard
ruby skin encasing small pink arils (seeds). It’s
the seeds, with their sweet/juicy flesh that are
eaten. Add to couscous and herbs for Middle
Eastern dishes, give lovely colour to a fruit salad,
or toss with baby spinach leaves, Persian fetta
and toasted pine nuts for a delicious salad.
Kohlrabi
Serves 4
2 brown onions, chopped
IN SEASON
Rinse beans then add
to the cassoulet. Add
tomatoes and stock, bring
to boil, then simmer for 30
minutes until liquid reduces
by half. Serve with char
grilled Turkish bread and a
sprig of thyme. Excellent
with a poached egg.

A type of brassica, both the leaves and the bulb of
these alien looking vegetables can be eaten. Kohlrabi
tastes great steamed, stir-fried, added to soups and
stews or dipped in tempura batter and fried. Peel and
grate to add a pleasing crunch and slightly spicy note
to coleslaw or use in pasta as Italians do, both the
leaves and flesh, with red capsicum and tomatoes.
Spaghetti squash
It may be the popularity of the paleo diet that’s
seeing a resurgence of interest in the spaghetti
squash. Raw, it looks just like any other squash
or pumpkin, but cut it in half and place open
side down on baking paper and pop in an oven
for 40 minutes or so and a transformation takes
place as the cooked flesh separates like spaghetti
strands. Use this mild flavoured vegetable
exactly as you would pasta or noodles.
