Fresh Belwood Turkey Cooking Instructions Portion size: Approximately 1 lb (454 g) per person Remove the giblets and neck from the body and neck cavity, then rinse and wipe the cavity and sprinkle with salt and pepper inside and out. Actual times may vary depending on oven. 25 Second Helpings Candied Pecans 2 cups 2 tbsp 2 tsp Roasted Cauliflower, Prosciutto and Gouda Casserole ( Serves 4 to 6 ) cauliflower head 1 5 to 6 slices prosciutto, julienned Gouda, grated 1/2 cup olive oil 1 tbsp Preheat oven to 190 C (375 F). Cut cauliflower into small florets and wash thoroughly. Dry the cauliflower with a paper towel, toss with olive oil and season with salt and pepper. Place in a glass casserole dish and bake for about 10 minutes. Remove from oven and layer prosciutto, spinach and cheese and return to oven. Cook until cauliflower is tender and cheese is melted. spinach, roughly chopped 1 cup Salt and black pepper to taste pecans egg white cinnamon powder Preheat oven to 180 C (350 F). Place all ingredients in a bowl and mix well. Spread out evenly on a cookie sheet. Cook in oven for 5 to 7 min. Remove and let cool. Pecans can be stored in the fridge for a week in an airtight container. For a fresh twist: For a fresh twist: • Add raisins or dried cranberries after you remove from oven. •Replace pecans with almonds, cashews or walnuts. • Add 1 cup of cream with the cheese and top with Panko crumbs for a creamy and crunchy casserole. 3 tbsp 1 pinch icing sugar cayenne pepper • Multiply the recipe to give candied pecans as a gift or party favour. Fill cellophane bags and tie with ribbon. • Serve as a snack at holiday parties or use to top winter salads and canapés. Merlot-poached Pears ( Serves 12 to 16 ) 750 ml 6 to 8 1 cup 1 cup Merlot pears, Bosc or Anjou sugar water 1orange 2 cinnamon sticks 1 or 2 pieces of star anise 1 tsp corn starch (optional) Pour the wine, water, sugar, cinnamon and star anise into a sauce pot. Zest half of the orange and add to the pot. Then cut the orange in half and squeeze its juice into the pot. Peel the pears, leaving the stem on, and imme rse into the wine mixture. Ensure all the pears are fully covered by liquid . Holida y Bread Pudding ( Serves 8 to 12 ) 3 to 4 cups 1 cup 1/2 cup 3 cups 5 white bread, cubed (day-old) dried cranberries pecans cream eggs, beaten Combine the bread cubes, cranberries and pecans in a bowl. In a separate bowl combine the cream, sugar, vanilla, cinnamon and eggs and whisk well. Pour over the bread mixture. . Store this mixture in the fridge for 2 to 3 hours Preheat oven to 180 C (350 F). Grease a medium-sized pan and pour the mixture into the pan. Dot with the cubed butter on top. to Place in the preheated oven and bake for 30 d shoul r cente the in ted inser knife 45 mins. A come out clean when done. Serve warm. 26 1½ cups 2 tsp 1 tsp 1/4 cup sugar vanilla ground cinnamon or allspice butter, cubed Poach on medium heat until the pears are just tender. Cooking time varies from 20 to 30 mins depending on the ripen ess and type of pears. Gently transfer the pears to a ceramic bowl. Mean while, strain the remaining poaching liquid and return to the sauce pot. Thicken with corn starch and 2 tbsp of water, or cook over high heat until a syrupy consistency is achieved. Pour the syrup over the pears. Refrigerate overnight or for a few hours. Before serving, cut the poached pear in half and remove the seeds with a spoon. Serve with vanilla ice cream.
