For extra flavour, double the ingredients that form the paste to marinate your protein overnight. Tagine is the name given to a fragrantly spiced stew, as well as to the earthenware pot used to cook a dish of this type in, pictured on the cover. Serve with couscous, rice or over fresh spinach leaves with your favourite meat.
