or many Canadians, a basic comfort food menu would
consist of meatloaf and apple pie. It could also be defined
as fried chicken with biscuits and gravy. Others may list favourites

Pastas
Al Dente pastas come in 10 flavours including
non-traditional choices such as wild mushroom
and spicy sesame. Favourites include their
original egg recipe and fettuccini made with
fresh spinach. The noodles are exceptionally
light and delicate, cooking in a mere two to
three minutes. Al Dente’s dough is made using
a blend of semolina and extra-fancy durum

moroccan vegetable tagine
serves 4
Sunterra chefs recommend lamb, beef or chicken to accompany this dish.
For extra flavour, double the ingredients that form the paste to marinate your protein overnight.
Tagine is the name given to a fragrantly spiced stew,
as well as to the earthenware pot used to cook a dish of
this type in, pictured on the cover. If you don’t own a
tagine use a Dutch oven or covered casserole instead.

½ tbsp coarse salt
2 cloves garlic, minced
1 tsp ground cumin
1 tsp ground coriander
1½ tbsp paprika
1 tsp toasted ground
cinnamon
½ small red chili, chopped
1/3 cup roughly chopped
cilantro
1/3 cup chopped roughly
parsley

juice of 1 lemon
1½ tbsp apple cider
vinegar
3 tbsp olive oil
½ cup water
1 lb. potato, cut into bitesize pieces
1 lb. pumpkin or squash,
cut into bite-sized
pieces
3 field tomatoes,
chopped
• Preheat the oven to 375 degrees F
• Grind the garlic with the ½ tbsp coarse salt, cumin,
coriander, paprika, cinnamon and red chili to a paste.
• Add the cilantro and parsley, and continue to grind.
• Mix in the lemon juice, vinegar, 3 tbsp olive oil and
water.
• Combine the potatoes, pumpkin or squash, tomatoes
and herb sauce in a tagine or casserole.
• Season to taste with salt and pepper.
• Drizzle with olive oil, cover, and bake covered for 1 hour
and 15 minutes or until vegetables are fork tender.
Serve with couscous, rice or over fresh
spinach leaves with your favourite meat.
