Beginning notes:
Ingredients for lemon Italian ice:
5 Lg or 6 Md lemons with peels
2 Tbl raw honey
1/4 cup agave
3/4 cup ice
3 3/4 cup water
3/4 cup cane sugar
• If you grew up in or around
Chicago you are familiar with Lemon
Italian Ice & Chocolate Ice. When you
travel through old Italian immigrant
neighborhoods like Cicero & Berwyn you
still see remnants of the classic Chicago
Ingredients for chocolate ice:
summer favorite.
6 Tbl unsweetened cocoa powder
• Lemon Italian Ice & Chocolate Ice are
1 tea molasses
both great treats to follow a heavy meal
1 1/2 cup sugar
like deep dish pizza or pasta.
3 cups water
• You can make this dish by hand: freeze
in a shallow dish/tray & scrape with a fork to fluff/flake your ice every half hour. This
process is very labor intensive & turns out to be more solid than using an ice cream
maker.
Recipe for lemon ice:
Peel your lemons shallow (don’t peel too deep or your Lemon Italian Ice will be bitter)
with a potato peeler. Add your peels & all other ingredients to a deep pan & turn your
stove to medium heat. When your mix comes to a low boil turn your heat down to low &
simmer for 10 minutes, then turn your heat off.
Juice your lemons (you should end up with just over 1 cup of lemon juice, if you do not
you should juice more lemons until you have just over 1 cup of lemon juice).
Once your lemon ice has simmered ten minutes turn off the heat & pour in lemon juice &
ice. Let your mix sit until cooled, then refrigerate. Once chilled in your refrigerator
run your mix in an ice cream maker until frozen & fluffy. Can in Ball brand Mason Jars
or other freezeable containers.
Recipe for the chocolate ice:
Bring all of your ingredients to a medium heat & turn the heat off once your mix starts
to steam or bubble. Cool until room temperature & then refrigerate. Once
chilled in the refrigerator run your mix in an ice cream maker
until frozen & fluffy. Can in Ball brand Mason Jars or other
freezeable containers.
* To use your ice cream maker; pour your ice mixture into
your inner container, put on your lid, attach your motor &
turn it on. Then add ice about halfway up the bucket, salt
heavily, then add more ice to fill the bucket & salt heavily
again.
