Order today at www.orders.AussieFarmers.com.a u Preparation Time: 20 min Cooking Time: 2-3 min Makes: 12 Ingredients: 1 1/2 cups milk 1x60g egg 2 cups self-raising flour 1/4 tsp bicarbonate of soda 1 tbs raw caster sugar 25g butter, melted 1 cup shredded English spinach leaves 80g feta crumbled 20g parmesan, finely grated, melted, for cooking basil pesto and finely grated parmesan, to serve Method: 1. Whisk milk and egg together in a jug. Sift flour and bicarbonate of soda into a bowl. Stir in sugar. Make a well in centre. Add milk mixture. Whisk until just combined. 2. Fold through the butter then the spinach, feta and parmesan. Heat a non-stick frying pan over medium heat. Brush the base of the pan with a little of the melted ghee. 3. Spoon 1/4 cup of the batter into the pan and spread out a little. Reduce heat to low and cook for 2-3 minutes or until bubbles start to appear on the surface and the edges begin to dry. 4. Carefully turn the pancake over and cook a further 2 minutes or until cooked through. 5. Transfer pancake to a clean tea towel. Wrap in the tea-towel to keep warm. Repeat with the remaining pancake batter, greasing the pan with melted ghee between each pancake. 6. Serve warm with a dollop of pesto and finely grated parmesan. Attention Coffee Lovers!
