Winter/ Spring 2012/2013 Cooking Class Schedule Sunday January 6th Oh My the Pastabilities The first part of our two popular pasta making classes. Today we will prepare homemade Egg Fettuccine accompanied by our Creamy San Marzano Tomato Sauce. Number two will be handmade gnocchi. You’ll use the recipe and technique so often it will become a family tradition. Light as a feather and coated with a butter and garlic sauce—this new twist will become a favorite! The trio will be complete with fresh butternut squash ravioli—a creamy béchamel laced with fresh sage will make a special meal often during the beautiful winter season! Sunday January 20th Dinner at Nonna’s. The last Sunday of the month has become an endearing favorite. More a dinner than a hands on class—we’ll work our way through a typical Italian Sunday dinner. Antipasti will be ready when you arrive and then we’ll begin to assemble Classic Italian Wedding Soup, Homemade Spaghetti in our Sunday Sauce. We’ll share the recipe for the best meatballs you’ll ever make. A beautiful Sunny Mediterranean Salad has become a favorite at the end of the feast. Nonna always made sure to have a special dessert ready—today—Cornetti Ripieni—a beautiful cone shaped cookie filled with custard and fruit---Don’t you love your Nonna?!!? Sunday January 27th Kids in the kitchen! Bring your grandchild, niece, nephew , daughter or son and learn along with them as we put together a great kid friendly Italian dinner! Our best homemade gnocchi, delicious meatballs, toasty garlic bread and even cookies in the shape of the Italian Boot will keep little fingers very busy all morning long. The kids can really have fun putting an entire meal together and you can be there to watch the graduation ceremony when each “chef” gets their diploma and hat! (Each child must be accompanied by an adult) Sunday February 3rd Ya Gotta Love Lemons We MUST feature this class each session since it is so popular and so often requested! Today our own Lemon Cream Sauce will gently coat the homemade pasta which has been infused with fresh lemon and grated lemon rind—it’s delicious! For our meat entrée—lemony chicken piccata accompanied by bright green Swiss Chard braised in olive oil and yes –fresh lemon! Finally, our ever popular Luscious Italian Lemon Love Cake will almost end the meal---just before you try a tiny bit of homemade limoncello.We’ll even recruit you to help start our next batch. Call early to sign up for this one---it’s always a hit!! Sunday February 17th Let’s have a cup of coffee and some biscotti! Different textures and different ingredients all give a deliciously different cookie—some sweet and some savory. Along with our famous Italian Love Knot recipe and some wonderful buttery apricot envelopes—it’s a sweet morning filled with recipes that will make a hit at every family function where cookies “are it”! Sunday February 24th Our endearing monthly favorite. Come help and enjoy a typical Italian Sunday Dinner like Nonna used to prepare. Today we’ll share classic Italian Wedding Soup, homemade ravioli, Nonna’s famous Bread and Butter Chicken and light and creamy tiramisu for dessert. With a cup of espresso and some Frank Sinatra tunes in the background you’ll reminisce about spending time in the kitchen with your aunts and squeezing around the table with ALL of your cousins!—it’s a great day! Sunday March 3rd Pasta, Too! Not a repeat of our first class earlier in the session—but three new pastas and three sauces to accompany each one. Tiny cavatelli in a simmering pot of garlicky pasta e fagioli, homemade manicotti stuffed with chicken and silky ricotta, Classic handmade meat ravioli with a delicious chunky tomato basil sauce---lightened up by some wonderful tiramisu for dessert—it’s a good day! Sunday March 10th Two Lasagnas and a Chicken---another favorite class. A delicious creation in lasagna form filled with arugula and prosciutto. And for the mushroom lover, our creation with portobellos, porcini and button mushrooms. Don’t think that all lasagnas are equal—these are better! Our own delicious “Chicken Calabria”—the boneless breast of chicken is just an accent to the wonderful sauce with sundried tomatoes and artichoke heart—topped off with a beautiful roasted beet and orange salad—you’ll have a party just to recreate this wonderful meal! Sunday March 17th Dinner in Tuscany—If you’ve been there, you’ll love this class. If you plan on visiting, it’s a great introduction! From Antipasti to Dessert we’ll prepare a traditional meal with recipes from Zia Francesca’s Tuscan kitchen. A beautiful Red Pepper Tart, a cannellini bean bruschetta and wonderful green pesto—will start off our banquet. Let’s do a superb wild mushroom lasagna as the “primo”the “secondo” is one of Maria’s favorites from a Tuscan kitchen visit—Chicken under a Brick—Yes a Brick!! Swiss chard with raisins and orange peel burst with the flavors of spring and finally a dessert of Winter Pears in Red Wine for the grand finale! Don’t miss this yummy tribute to one of Italy’s most popular regions! Our beautiful and delicious Cauliflower in Puff Pastry—the recipe came back with us from Rome! A childhood favorite at our house—Peas and Eggs—you’ll love it, too! We have to make a Frittata! Lots of fluffy eggs and cheese with some crumbled sausage and a wonderful brunch dessert—panettone bread pudding! Come ready to start the morning with an Italian breakfast “aperitif” and help prepare and enjoy until we serve the espresso! Sunday April 28th Right before we leave for May Italy trip—Dinner at Nonna’s. This Sunday, since we’ll be visiting Calabria—we’ll prepare a true Italian meal! From artichokes to zucchini and eggplant in between— we’re really good at veggies in Calabria. My aunt’s famous soup, Cavatelli with green beans and smoked mozzarella oh my! Classes are held Sunday morning at 11 a.m. and last about 2 ½ hours. We serve all that we prepare and hand out printed recipes for you to take home. Cost per person is $45 per person per class. Your payment in full only guarantees your reservation. No refunds are made for cancellation after registration. We reserve the right to cancel a class due to lack of enrollment or bad weather. We will refund your payment under these circumstances. We limit class size to 10 guests so early registration is recommended.
