Menu Project: Camp Foodie Sonia Malhotra Nicki Noury Suzie Parada Welcome to Camp Foodie! Camp Foodie is a one week over night summer camp that accommodates up to one hundred active children, ages ranging from 9-11 years old. Our beautiful camp is a located by a fresh water lake which is surrounded by secluded redwood forests in the heart of northern California. Camp Foodie is conveniently located about one hour away from San Francisco and Marin County. Camp Foodie is a moderately expensive full camp experience including daily meals, lodging and outdoor activities. Camp Foodie offers both nonvegetarian and vegetarian food options that are amid to please any individual appetite or preference. The theme or philosophy of Camp Foodie is focused on educating and exploring the wonderful world of food. As the name of our camp suggests, we want to bring the love and fun of eating food to a new generation of potential foodies. In fact, our creative fun filled daily menus set the tone for the exciting activities that are planned each day. Each day of the week new menus and themes are introduced to insure variety and a different fun educational focus. For example, some menus that we have created were influenced by our favorite cartoons, superheroes and jungle animals, in which the campers will know what the day is going to be about with their first bite of breakfast. In order to meet the individual needs for all our growing campers we create menus that have a yummy array of foods from every food group. The campers are also directly linked to their food through our large 25/20 ft vegetable garden that each camper helps maintain every day. The campers take a hands on approach to with their food by harvesting their own vegetables which are then served back to them in new inventive ways which makes their gardening experience all that more special. Most of the expense that is included in the price of our camp goes to our delicious and nutritious meals, so naturally we buy only the highest quality local foods to compliment our fun and creative dishes. Due to the short length of our camp and relatively small occupancy we are able to buy supplies and stock fresher food for the entire week. Our large fully functioning kitchen with walk-in freezers allows space for fresh and frozen food storage. All of our food is made fresh in our kitchen so we are able to avoid many high processed food items. Are vegetable garden also supplies us with a majority of our vegetables for our dishes. All of our food is steamed, baked or broiled in insure the highest quality and nutritional content in all of our foods. Our food is served in a cafeteria style setting, in which our own camp counselors serve each camper the appropriate amount of each food item. In order to avoid food waste we base all of our quantities of food made by the exact number of campers. To keep all of our quantities on track we have specific portioned plates and serving equipment to ensure our campers receive the adequate amount of food at every meal. Each of our meal ideas are developed weeks before they are put into our menu selection to make sure that all of our food combinations each day are in regulation with the U.S. Dietary Guidelines. Throughout the day every camper is provided with an appropriate amount of protein, grains, dairy, fruits, vegetables and fats that is fit for healthy growing boys and girls. For instance, our standard lunch for both vegetarian and non-vegetarian options consists of 2-3 servings of protein, 2-3 of dairy, 6-11 of grains, 3-5 of vegetables, 2-4 of fruits, 0-1 of fats. Our hearty meals are fit for outdoor appetites and are primarily high in grains and proteins to keep our campers energized and satisfied throughout the day. Camp Foodie is dedicated to providing a fun, educational and more importantly a lifelong memorable experience that each camper can incorporate with every new day and every new bite! SUPERHERO DAY MENU -Breakfast- Fruit option: sliced oranges Fruit Juice options: Fresh Cranberry Juice or Apple Juice Cereal Options Option 1: Hot Hercule-s Grits-Creamy grits sweetened with pure maple syrup and topped with raisins Option 2: Wheaties Brand Dry Cereal Entrée option: Monkey See Peanut butter and bananas- Whole wheat bagel toasted and smothered with all natural peanut butter and slices of banana Bread options: Whole Wheat or White Bread Beverages: Tea or milk -Lunch- Soup option: Ruby Red Soup- Juicy tomatoes cooked with broth, onion, parsley, and dash of herbs. Entrée Option Option 1: Ghost Rider Grilled Cheese- Fresh Cheddar cheese melted onto two slices of whole what toast Option 2: The Thunderbird Sandwich- Seasoned turkey breast sliced thin and grilled. Topped with sliced tomato and honey dijon mustard Vegetable option: Carrots N Glaze- Shredded carrot salad topped with an orangebutter glaze to enhance inherent sweetness of carrots Bread option: Warmed bread rolls- Mini rolls baked fresh. Good for dipping in soup Salad Bar Option Option 1: Colossal Roman Salad - Fresh romaine lettuce tossed with diced cucumbers and fat free herb vinaigrette dressing. Optional 2: An Apple a Day Salad- Sliced gala and granny smith apples mixed with tangy beets Dessert Option Option 1: Pineapple Raspberry Bliss - Creamy non fat peach yogurt topped with sliced pineapple and raspberry bits Option 2: Comet Man Cookies -Rolled oats add the heartiness of these brown sugar-chocolaty treats!
