Below are some kitchen tips to save you
time and help you plan for the week ahead.
TIME SAVING TIPS:
Lunch 1: Strawberry Shortcake Wafflewich - Make your own waffles and serve them as a fun breakfast this
weekend. Double (or triple) your batch, freeze, and have them ready to go!

Lunch 2: Pizzadillas - Pizza quesadillas can be assembled the night before. In the morning, toast or grill.
Oh yes, these even freeze too!
Lunch 3: Strawberry Cheesecake Bites - This menu item is meant as a treat… for one of those days your child
wants his or her go-to sandwich. Strawberry bites can be made up to 3 days ahead of time and stored in the
refrigerator.
Lunch 4: Easy Broccoli and Cheese Mini Quiches - These mini quiches can be made for dinner one night and
served with soup or a salad. They can be frozen as well. If you freeze them, warm them up in the morning
before packing them inside the lunch box. Don’t worry, they are meant to be eaten at room temperature – so
pack them in a regular container.
Lunch 5: Egg Salad with Turkey and Cheese Swords - Make a large egg salad for the whole family! If you
choose to make an egg salad sandwich, you can freeze the sandwich the night before. In the morning, pack
the frozen sandwich in the lunch box. It will thaw by lunch and you won’t need an ice pack!

putting some of their favorite items together in a nutritious lunch?
Lunch 2: Pizzadillas - Call it pizza, and kids will eat it. This is a great lunch to sneak in extra veggies.
Lunch 3: Strawberry Cheesecake Bites - Think outside packaged treats. Some days your child wants their
favorite sandwich and a fresh treat is all you need.
Lunch 4: Easy Broccoli and Cheese Mini Quiches - Many of our menu items serve as a great
foundation for healthy eating. These are versatile: prep them ahead of time, freeze them, and then eat
them at room temperature.
Lunch 5: Egg Salad with Turkey and Cheese Swords - What’s more fun than a little bit of this, and a little
bit of that? Nutritious quick lunches are the way to go for short school lunch periods.

Strawberry Shortcake
Wafflewich
INGREDIENTS:
• 1 tablespoon cream cheese
• 2-3 strawberries, sliced
• 2 whole-wheat waffles (homemade or storebought)
DIRECTIONS:
1. Spread cream cheese on one side of each waffle.
2. Slice strawberries and place on top of cream cheese.
3. Serve with fresh fruit, veggies & treat of choice.
MOM TIP:
Make these waffle sandwiches ahead of time and store them in the refrigerator. In the morning, pop them
in the toaster oven and pack them to go. By lunchtime, the waffles will still be crispy from the toaster and
the filling will be a perfect temperature.
Don’t have strawberries? Substitute any other berry or organic preserve.
Did you know you can prevent browning on cut up fruit (like apples) by rubbing it with a bit of lemon juice?

Pizzadillas
INGREDIENTS:
• 1 8”-tortilla
• tomato sauce/pizza sauce
• shredded mozzarella cheese
• spinach leaves
• black olives
DIRECTIONS:
1. Lay tortilla on a flat surface. Spread pizza sauce evenly on tortilla.
2. Layer pizza toppings on one half of the tortilla, fold other side over into a half moon.
3. Grill or toast pizza quesadilla until cheese is melted. Allow to cool slightly before cutting.
MOM TIP:
Prepare these the night before and grill or toast them in the morning. This is meant to be eaten at room
temperature, so give it a minute or two to cool down, otherwise the hot filling will spill out. Too much
tomato sauce can cause the same problem, so just a thin layer will do. Grilling the quesadilla blends all
the flavors together and makes it delicious. For bigger appetites, make a full pizza quesadilla.
Gluten-Free Option: Use gluten-free tortillas.

Strawberry
Cheesecake Bites
INGREDIENTS:
• 8 oz. tub whipped cream cheese
• 1/2 cup powdered sugar
• 2-3 tablespoons graham cracker crumbs
• 16 medium-large strawberries
DIRECTIONS:
1. In a food processor, combine cream cheese and powdered sugar.
2. Put the combined cream cheese and powdered sugar mixture in a bowl.
3. Put the graham cracker crumbs into another bowl.
4. Dip the widened end of the strawberry in the cream cheese mixture, then roll it around in the graham
cracker crumbs.
Gluten-Free Option: Use gluten free cookie crumbs.
Storage: Refrigerate strawberry cheesecake bites up to 3 days.

Easy Broccoli &
Cheese Mini Quiches
INGREDIENTS:
This is one of those versatile recipes that can have
dozens of variations. Omit broccoli and
substitute another veggie or meat, if desired.
• ½ cup chopped broccoli
• 6 eggs
• 3 tablespoons milk
• 1 cup shredded cheddar
• ½ cup Bisquick mix
OR
• ½ cup all purpose flour, ½ tsp corn starch, ½ tsp baking powder
DIRECTIONS:
1. Preheat the oven to 350°F. Grease a 24-cup mini muffin pan.
2. In a medium bowl, beat the eggs. Stir in the baking mix, milk, cheese, and broccoli.
3. Spoon into greased muffin cups.
4. Bake for 10 to 15 minutes in the preheated oven or until the tops are lightly browned. Allow mini
quiches to cool in the pan before carefully removing with a small knife or spatula.
MOM TIP:
Make these ahead of time. Recipe yields 24 mini quiches, so you can refrigerate or freeze extras. In the
morning, remove from refrigerator and they will be room temperature by lunch (or microwave for 30
seconds before packing in lunch box). Kids also love these for dinner with warm soup!
Gluten-Free Option: Use gluten-free Bisquick mix or ½ cup all purpose gluten-free flour baking blend,
½ tsp corn starch, ½ tsp baking powder.

Egg Salad with Turkey
and Cheese Swords
Yields 2 servings
INGREDIENTS:
• 4 boiled eggs, diced
• 1 tablespoon Dijon mustard
• 1 teaspoon paprika
• 1 tablespoon chives, chopped (optional)
• 2-3 tablespoons Greek yogurt
• salt & pepper to taste
• oven roasted turkey
• cheese cubes
DIRECTIONS:
1. In a bowl combine all ingredients and mix thoroughly. Cover and keep in a fridge.
Swords:
Alternate poking turkey and cheese in rounded picks. In the photo below, we used left over turkey slices
from dinner, but gluten-free deli turkey will work too.
This egg salad is ideal in sandwiches, pitas, lettuce wraps and tortilla wraps. Depending on your child’s
appetite, serve with fruit, veggies or crackers.
Vegetarian Option: Substitute turkey for cherry tomatoes.
