Make Me One “CHICAGO-STYLE!“
1. Fill a steamed hot dog bun with an authentic RED HOT CHICAGO pure beef hot dog or polish sausage
2. Add a line of yellow mustard from end to end
3. Add approx. 1 teaspoon of green relish from end to end

1. Return this agreement and check for $495.00 payable to Red Hot Chicago to your sales representative, or mail directly to:

2. Your table top hot dog cart will be shipped directly to your business from the hot dog cart manufacturer. Please allow 2‑3 weeks for delivery.
You will receive 4 free cases of Red Hot Chicago brand hot dogs from your authorized distributor.
3. You agree to use Red Hot Chicago brand pure beef hot dogs exclusively in the equipment provided, and not to alter or tamper with the
Red Hot Chicago logo and graphics which are a part of the unit.

OPERATIONS MANUAL FOR TABLE TOP HOT DOG CARTS
Assembly and Preparation of Unit
1. Make sure all components are properly cleaned and sanitized.
2. Fill unit with 1‑2 inches of hot water.
3. Insert perforated pan (for steaming buns) in unit.
4. Fill hot dog compartment with 2‑3 inches of hot water (about half full).
5. Cover both compartments with hinged dome lid.
6. Plug in unit and turn dial completely clockwise until unit is set on maximum heat (red light should be on).
7. Heat water for approx. 40‑45 minutes to desired temperature of 180ºF. before adding hot dogs.
8. Adjust dial to maintain water between 160‑180ºF; turn counter‑clockwise until red light goes off.
Preparation of Condiments
1. All condiments should be properly refrigerated until opened, except yellow mustard and sport peppers.
2. After opening, yellow mustard and sport peppers should also be properly refrigerated.
3. Yellow mustard should be poured into yellow squeeze bottles for easy dispensing.
4. Ketchup should be poured into red squeeze bottles for dispensing.
5. Green relish should be added to a small, clear plastic container (1/8 size) and placed in refrigerated well with spoon for dispensing.
6. Freshly diced onions should be added to a small, clear plastic container (1/8 size) and placed in refrigerated well with spoon for
dispensing.
7. Whole fresh tomatoes should be sliced (10‑12 slices per tomato) and added to a small, plastic container (I/8 size) and placed in
refrigerated well with fork for dispensing.
8. Pickle spears should be added to a small, clear plastic container (1/8 size) and placed in refrigerated well with fork for dispensing.
9. Sport peppers should also be added to a small, clear plastic container (1/8 size) and placed in refrigerated well with spoon for dispensing.
10.Celery salt should be available on the counter.

Heating and Cooking Procedures for Hot Dog Buns and Hot Dogs
1. Hot dog buns should be steamed in the cardboard package with cellophane wrap intact (sealed) until approx. 15‑20 minutes before serving;
the package should NOT come in direct contact with the metal perforated pan; it is OK to place the package of buns on a white cloth towel.
2. Hot dogs should be immersed in hot water and heated for at least 8‑10 minutes before serving.
3. Bun compartment and hot dog compartment should be closed when not serving product.
4. Temperature of water for hot dogs should be periodically monitored, and dial should be adjusted to maintain water between 160‑180ºF.
5. Water levels in the unit itself as well as in the hot dog compartment should be checked every 2‑3 hours to prevent electrical damage to the
unit or burning of the bottom of the pans; add hot water as needed.
6. When adding additional hot dog buns to the bun compartment, put the new package of buns on the bottom and rotate older buns to front and
close lid.
7. When adding additional hot dogs, transfer the remaining hot dogs to the bun compartment.
Quality Assurance Procedures for All Food Products
1. Hot dog buns should not be used if soggy or hard.
2. Hot dog buns can be reused the following day if properly wrapped in plastic wrap and stored in the refrigerator.
3. Hot dogs should not be served after remaining in hot water for longer than 90 minutes; discoloration of the hot dog is the primary indicator
that they have absorbed too much water and should not be served.
4. Hot dogs can be reused following day if appearance is fine and if product was in water for not more than 30 minutes; hot dogs must be
wrapped in plastic wrap and stored in refrigerator.
5. All condiment containers and dispensers should be wiped and cleaned during operations; containers which are properly filled have the best
appearance; always rotate and transfer older product to container of fresh new product as needed.
6. All condiments should be covered and stored in refrigerator when not being used.

Instructions for Garnishing “Chicago‑Style” Hot Dogs
1. Using tongs, fill a steamed hot dog bun with an authentic RED HOT CHICAGO pure beef hot dog.
2. Add a line of yellow mustard from end to end.
3. Add approx. 1 teaspoon of green relish from end to end.
4. Add approx. 1 teaspoon of fresh chopped onions from end to end.
5. Add 2 fresh tomatoes wedges along the back of the bun.
6. Add a crisp kosher-style pickle spear along front of bun.

9. Wrap fully dressed hot dog in pop‑up dry wax paper and package in white paper bag of desired size for carryout or dining in; staple receipt
to bag for proof of purchase.
Safety Instructions for Disassembly and Clean‑up of Unit
1. Unit should be completely turned off and unplugged before clean‑up.
2. Hinged dome lid should be removed first in order to cool down unit.
3. For safety, all pans should be removed and handled with insulated gloves.
4. All parts, components and utensils should be properly washed and sanitized.
5. Any water remaining in unit should be poured out into sink or another container; DON’T EVER IMMERSE UNIT IN WATER; unit may simply be
wiped and cleaned and sanitized.

ADVERTISING SIGN AGREEMENT
Agreement made this__________________day of ___________________, between Red Hot Chicago, Inc.
and __________________________________________________ (hereinafter referred to as Customer).
In consideration of the premises and the Customer's agreement to purchase all of its requirements of hot dogs
from Red Hot Chicago or through an authorized distributor of Red Hot Chicago, to assist Customer in the promotion of its
business and to promote the sale of hot dogs as well as other products provided by Red Hot Chicago, Red Hot Chicago shall, in
its sole discretion, furnish to Customer advertising material(s) or sign(s) described as follows:

The aforementioned advertising material(s) or sign(s) shall be and shall remain the property of Red Hot Chicago and shall
be prominently displayed in the premises of Customer, provided however that Red Hot Chicago shall have the right and

To order a Red Hot Chicago neon sign, Customer agrees to pay deposit in the amount of $250 and Red Hot Chicago
agrees to refund said deposit if aforementioned neon sign is returned to company intact and in working order. Customer also
agrees to pay for any repairs to said neon sign, except for any repairs to transformers which are under warranty for one (1)
year.
