Mini Bacon Pecan Tarts Prep Time: 1 1/2 hours (includes chilling time) Total Time: 2 hours Servings: Makes 24 tarts Ingredients 1 package Sugardale bacon 1/2 cup, plus 1 Tbsp. butter, softened 3 oz. cream cheese, softened 1 cup flour 3/4 cup brown sugar 1 egg 3/4 tsp. vanilla 1/8 tsp. salt 1/2 cup chopped pecans 24 whole pecans Instructions 1. 2. 3. 4. 5. 6. 7. Preheat oven to 325˚. Crisp bacon in a skillet over medium heat. Allow to cool on paper towels. Crumble bacon and set aside. In a mixing bowl, combine butter, cream cheese, and flour until thoroughly mixed. Wrap dough in plastic wrap and refrigerate for 1 hour. Spray a mini muffin pan with non-stick spray. Divide cookie dough into 24 portions and press dough into the bottoms and up the sides of the mini muffin pan forming little cups. In a small mixing bowl, combine brown sugar, egg, vanilla, and salt. Mix well and set aside. Fill each cookie dough cup with chopped pecans and crumbled bacon. Pour brown sugar mixture over pecans and bacon to fully cover.
