Easy Dairy Free Cake
Schar Gluten Free Marble Cake (sliced into 1-inch slices)
1 Pint So Delicious frozen dessert of your choice (Chocolate Coconut Milk pictured)
4-inch spring form pans
Enjoy Life Foods chocolate chips
Optional – Glutino pretzels (plain or sweet), shredded coconut or sprinkles
Slice the Marble Cake into 1-inch slices. Then slice the top, curved area off, keeping the bottom half for
later.
Place the spring form pans into a casserole dish (this will allow support while freezing and easy clean up
if it drips).
Making sure the frozen dessert has been left out to soften enough to form into the spring form pans,
place 3-4 scoops into the bottom of the pans. If you find it difficult to flatten, gently press down using
waxed paper. Add the curved tops of the Marble Cake along the circular edges of the pans, forming the
outer cake area. Use the remaining bottom pieces to fill in the middle. Top with more frozen dessert,
chocolate chips* (or other optional toppings) cover the casserole with plastic wrap and freeze until firm.
Once frozen, warm a knife under hot water and gently run along the sides of the pans to loosen the
cakes. These cakes will need to be removed from the pans very gently with the probability of some of
the cake sticking to the sides of the pans. Serve immediately. Freeze any uneaten portions, making sure
the dishes are tightly sealed with plastic wrap to avoid freezer burn.
Makes (2) 4-inch cakes
*I used melted chocolate for the picture but found cutting was difficult and caused the cake to come
apart. I recommend just adding whole chocolate chips on top of the cakes to allow easier cutting.
