We’ve enlisted our Director of Education, Robert Siebert, who is also a
Le Cordon Bleu trained chef, to share his favorite bites and sips for Summer 2015.
Get ready to cook!
QUICK & REFRESHING
Cold Cucumber Soup
Serves 6
Ingredients:
3 (7 oz) containers of Greek yogurt
1 c Half & Half
2 hothouse cucumbers, unpeeled,
seeded and chopped
½ c chopped red onion
6 scallions
(white & green parts) chopped
4 tsp kosher salt
1 ½ tsp ground pepper
3 Tbl (or more) fresh chopped dill
½ c freshly squeezed lemon juice
Lemon slices for garnish
1. In a large bowl combine all ingredients except the dill, lemon juice and lemon slices.
2. Working in batches, coarsely puree in a food processor to desired consistency.
3. Pour into another bowl and fold in the dill.
4. Cover and refrigerate for at least 2 hours.
5. Just before serving, stir in the lemon juice and adjust seasoning if needed.
6. Serve in chilled bowls with lemon slices.
