Today it is still made from these varieties, grown in the traditional way, with a malo-lactic fermentation. This is a harmonious Blanc de Noirs, well representing Saint-Thierry Mountain. Its great freshness is expressed via its aromas of white fruit (apple, pear, peach), which mix delicately with more vegetative flavours such as menthol and eucalyptus. The palate is round and elegant. Fully balanced and accessible, it will flatter the palates of all connoisseurs.
