JAMS & PRESERVES - CLASS M
RECIPE FOR:
RICH FRUIT CAKE (L1)
Sponsored by Agricultural Societies Council of N.S.W.
Here’s what you need:
250g (8oz) Sultanas
250g (8oz) Chopped Raisins
250g (8oz) Currants
125g (4oz) chopped mixed peel
90g (3oz) chopped red glace
cherries
90g (3oz) chopped blanched almonds
1/3 cup sherry or brandy
250g (8oz) plain flour
60g (2oz) self raising flour
1/4 teaspoon grated nutmeg
1/2 teaspoon ground ginger
1/2 teaspoon ground cloves
250g (8oz) butter
250g (8oz) soft brown sugar
1/2 teaspoon lemon essence OR
finely grated lemon rind
1/2 teaspoon almond essence
1/2 teaspoon vanilla essence
4 large eggs
Here’s what you do:
Mix together all the fruits and nuts and sprinkle with the sherry or brandy. Cover and leave for at least
1 hour, but preferably overnight.
Sift together the flours and spices. Cream together the butter and sugar with the essences. Add the
eggs one at a time, beating well after each addition, then alternately add the fruit and flour mixtures. Mix thoroughly. The mixture should be stiff enough to support a wooden spoon.
Place the mixture into a prepared tin no larger than 20cm (8”) and bake in a slow oven for approximately 3 1/2 - 4 hours. Allow the cake to cool in the tin.
NOTE: To ensure uniformity and depending upon the size it is suggested the Raisins can be snipped
into 2 or 3 pieces; cherries into 4-6 pieces and almonds crosswise into 3-4 pieces.

extract from the Show Society minutes dated 10th September, 1964, tells us that (quote):- “The
president paid tribute to Mrs. P. Kelly, a chief stewardess of former years, who had passed away
since our last meeting. He said that Mrs. Kelly had always been a staunch worker for all sections of the show, but it was in the Cookery, Jams and Preserves sections that she had devoted

IMPORTANT NOTICE TO ALL EXHIBITORS
Any exhibitors intending to bring electrical equipment to the Showgrounds will be required to ensure
that such equipment is fitted with earth leakage circuit breakers and that all electrical leads, tools
and appliances have been inspected and tagged by a licensed electrical contractor.
This is essential for the safety of yourself, your fellow exhibitors and the general public and is a
requirement of the Work Health and Safety Act of 2011. The Act imposes very severe penalties
in the event of non-compliance with its provisions.
Please check all your electrical equipment and leads BEFORE you come to the Showgrounds to
avoid the occurrence of any difficulties.
HOW TO ENTER
The sections for competition in the pavilion all require early entry - closing dates for entry are
given in each section, 4 p.m. on the Wednesday prior to the Show.
1. Fill in the entry form in this schedule with Class (e.g. K), Section (e.g. 14) and description (e.g.
3 single geraniums).
2. Either post it to P.O. Box 79, Junee, with instructions on whether to return post the entry tickets
or whether you will pick them up from the Show office, or
3. Alternatively, bring the entry form to the Show office between 10 a.m. and 4.30 p.m. weekdays
from Friday, October 17 to Wednesday, October 22. The Secretary will then issue you with your
entry tickets.
4. Phone entries will be taken. Phone Secretary Jenny Griffin at the Show office during office hours
on ph/fax (02) 6924 1008. The Secretary will then send you your entry tickets or you may collect them at the Show.
5. Secretary Jenny Griffin is only too pleased to receive inquiries about entering in the various sections, or you may phone the Chief Stewards/Stewardesses at the numbers listed at the start of
each section if you have any queries about the classes.
6. Most pavilion sections are judged on the Friday morning before the Show. We appreciate having entries at the Showground as early as possible that morning as the Stewardesses must display all the entries prior to the judges starting work. Non-perishables may be left at the Show
office any time in advance, during office hours.
7. No competitors are allowed in the pavilion during judging. Pavilion will be closed from
10am Friday until 9am show day. The pavilion will be opened to all at 9.30 a.m. on Show
day.
8. The pavilion will be opened to the public and your entries must remain in our care until Saturday
night at 6.00 p.m. The pavilion will then be closed but the stewardesses will re-open it to competitors to collect their exhibits. Exhibitors must not remove any items without the direction of
the Stewardesses of that section. We appreciate your patience in this regard.
9. If you have won prizemoney, you may collect it from the Secretary’s office (under the grandstand at the Showground) from 4 p.m. on Show day, any money not collected will be forfeited.
