ESKIMO PIE by Janet Spencer On January 24, 1922, Christian Nelson was issued a patent for the world's first Eskimo Pie. Come along with Tidbits as we consider the impact the Eskimo Pie has had on society! A NEW TREAT • Christian Nelson operated a candy store and ice cream shop in Iowa. One day a boy couldn’t decide whether to buy a candy bar or ice cream. That made Christian wonder why you couldn’t combine both. • Experimenting, he found that cocoa butter would glue chocolate covering to a disk of ice cream. He called it the 'I-Scream Bar.' • In 1922 he went to a man named Russell who managed the Graham Ice Cream Company, who paid half the cost of a patent for half the profits. Russell’s wife suggested the name Eskimo Pie for the product. Each Eskimo Pie was wrapped in tin foil. • When the product hit the market, it caused a frenzy, selling a million a day. The company became the biggest consumer of tin foil in the nation. To meet demand, they licensed dairies to make the product in exchange for a royalty, but some dairies failed to pay royalties while others infringed on the patent. • In 1929 a judge ruled that it was not something that could be turn to page 5 for more! He was black, so his options were limited but he never let that stop him. • He learned carpentry from his father, attended local schools, and became interested in mechanics. Because he excelled at school, his father sent him to Washington, D.C. to attend Wayland Seminary. This was one of several schools founded by the American Baptist Home Mission Society to educate African-Americans after the Civil War. • Later he settled in Pittsburgh, Pennsylvania. He got a job working as a porter in the Markell Brothers drug store and St. Charles Hotel. While working at the drug store, he noticed how popular ice cream had become, and he also noticed how difficult it was to serve. It consistently stuck to the spoon or ladle that was being used to scoop it, and required either two hands or two people to get it into the dish. He was determined to solve the problem. • Being mechanically inclined, he set to work on the problem. The first prototype he showed to the Markell Brothers was a simple stick with a cone-shaped object mounted on the end. The Markell Brothers didn't think it would work, until Cralle took a container of ice cream and demonstrated it for them, easily plopping a perfectly-shaped mound of ice cream into a dish. • On February 2, 1897, Cralle was granted a patent for what he called an "ice cream mold and disher" now known as the ice cream scoop. It was designed to keep ice cream as well as other foods from sticking to the utensil, and it was easy to operate with one hand. • Cralle's design was strong, durable, effective, and inexpensive. It could be constructed in a variety of shapes depending on whether a cone or a mound was desired. It could be constructed out of a variety of materials. There were no delicate parts that could malfunction. This simple device allowed ice cream to be served faster, with less effort and more hygienically. • Cralle never received much in the way of financial success from his invention, nor did he receive any wide-spread acclaim. However, when the Afro-American Financial, Accumulating, Merchandise and Business Association was organized in Pittsburgh, he was named Assistant Manager. • Cralle was 30 years old when he was granted his patent, married with two daughters and a son. His wife and one daughter died in 1918, possibly due to the flu epidemic. His son died of disease in 1918, and Cralle himself was killed in an automobile accident in 1920. But his daughter Anna lived to the age of 98 and died in 2009. By then her father's invention had become standard issue in households around the world. • Next time you bend your spoon in half for lack of an ice cream scoop, think of Alfred Cralle, and say a word of thanks. • When choosing an ice cream scoop, pick one with a good grip on the handle so it won't slip if your hands are wet. Be sure it has sharp edges so it will cut easily into the ice cream. Get one with a big wide scoop to provide maximum ice cream retrieval. Dunk the scoop in hot water for a few minutes to facilitate scooping. Drag the scoop in an S-shape across the surface of the ice cream. If you are scooping multiple dishes, keep the hot water handy and dip the scoop in between. The studies tracked 74,341 in the Nurses’ Health Study and 43,744 men in the Health Professionals Follow-up Study. Bread immediately comes to mind when we think of increasing our grain intake, but bread labels can be confusing. Here are some of the myths and truths about bread, as provided by WebMD.com. Myth: If the bread looks brown and has “wheat” in the name, it contains fiber and whole grain. Truth: The only way to tell what bread really contains is in the ingredients label. “Wheat flour” or “enriched wheat flour” means it was made with mostly white flour. The color might come from molasses. Myth: If the name of the bread sounds healthy, such as “grains” or “natural,” it must be healthy. Truth: Again, the ingredients label is where you’ll find the true information. A bread can be called “natural” or say how many grains it has, but the first ingredient in the label will tell you what’s really in it. How to buy the healthiest bread: • “Wheat bread” is wheat flour, not whole wheat. Look for “100 percent whole grain” or “100 percent whole wheat.” Even if you’re picking up a loaf of rye bread, don’t assume it contains rye flour as the first ingredient. • Beware the sodium level. Some breads are quite high in sodium and can become a major portion of your daily limit. • Look at the calories per serving, and don’t be fooled by the difference between “per slice” and “per serving.” • Check the grams of fiber. For more sources of whole grains, go online to www. choosemyplate.gov. NUGGET OF KNOWLEDGE The most expensive ice cream sundae in the world is the Grand Opulence Sundae served at the Serendipity 3 restaurant in Manhattan. It has 5 scoops of Tahitian vanilla bean ice cream infused with vanilla from Madagascar, covered in edible 23K gold leaf, drizzled with the world’s most expensive chocolate, topped with chunks of rare Chuao chocolate, and served with candied fruits from Paris, almonds covered in gold, truffles, Marzipan Cherries, and a dessert caviar. It comes in a crystal goblet with a gold spoon and is topped with a gilded sugar flower. It costs $1000 and they serve about one per month. Now there are apps especially for military and veterans. The Department of Veterans Affairs has its own app store (mobile. va.gov) with applications such as Mobile Blue Button (manage your health care and communicate with your care teams) and Summary of Care (view your medical information, including lab results and medications). It is one of the most broad spectrum pre-emergent herbicides labeled for use in flower beds for home gardeners. They key is knowing what types of weeds you are trying to control. If your main weed problem is Bermuda grass, Preen will have no effect, since it is a perennial. Preemergent products work on annual weeds. We have two seasons of annual weeds - cool season and warm season. You are too late for the winter weeds, but you can help to prevent summer weeds by applying in late March through early April. If you plan to grow any flowers from seed directly in this bed, don’t use the herbicide. I usually prefer to hand weed and mulch instead of using herbicides, but I know that some weeds, including my nemesis chambers bitters would be at least deterred with a pre-emergent herbicide. I am glad to hear they are alive, since you say you mulched them heavily. Iris plants Q. A. are one of the few plants we recommend NOT mulching. The rhizomes (bulb structure) are usually planted half in the ground and half out of the ground. Mulching can cause the bulbs to rot. Probably the saving grace was how miserably dry it was this past summer and fall. Leave the plants alone for now, but remove part of the mulch. I would not recommend removing it all because I am concerned how exposed that would make the bulbs, since they have been protected by this blanket of mulch. Pay close attention to the plants and weather this spring and gradually get the mulch away. Iris plants are often evergreen. Iris growers typically cut the fans back 8-10 weeks after bloom to tidy things up and cut down on disease issues, bis not a definite requirement, and should only be done once a year in the summer. I have a 20-foot Norway Spruce that is about 20 years old. It did beautifully until about 3 months ago. I did not water it during the summer since I had never watered it and it appeared to be doing just fine. I then noticed that it had some branches partially turning brown. I watered it heavily then, but more branches turned brown. Now the tree is about 1/2 brown and the rest appears very green. Any suggestions? Will the deadened branches rejuvenate? Q. A. I I am surprised that you have a 30 foot Norway spruce that has thrived with no supplemental water for 30 years! Norway spruce’s don’t like heat and humidity, and it gets compounded by droughts, and we have had our fair share of those in the past 30 years. Unfortunately, the branches that have totally browned out are dead and will not resprout - typically needle type evergreens carry their growth buds where there are green needles. Hopefully there is enough life left in the tree that it will still grow and you can gradually reshape it. I would definitely consider watering during dry periods from now on - we recommend that even with our natives. I have a beautiful Bradford pear tree in my front yard, about 36 feet tall. Yesterday I noticed a woodpecker pecking on its trunk, and upon closer examination, I discovered a large number of small holes (at least 50, probably more) all over the trunk, some an inch apart and some a few inches. What can I do to keep the birds from pecking? Will such holes, if they are continued to be made, eventually kill the tree? I don’t want to lose it. Woodpeckers typically find a favorite tree and revisit it over and over again. Usually the damage is cosmetic and not life threatening. You can discourage them by temporarily using a tree wrap around. Q. A. STRANGE BUT TRUE By Samantha Weaver ۩ It's not known who made the following sage observation: "The best way to lie is to tell the truth -- carefully edited truth." ۩ In a survey conducted by the Cumberland Farms chain of convenience stores last year, more than half of respondents said they would rather have jury duty for a week than give up coffee for the same length of time. A whopping 69 percent would rather give up alcohol than coffee for a week. ۩ Finland once banned Donald Duck comics because the title character doesn't wear pants. ۩ You might be surprised to learn that World War II played an important role in the rise of popcorn as a favorite snack at the movies. During the war, the U.S. was cut off from many sugar-exporting nations, causing shortages and rationing on the home front. The scarcity of sugar resulted in a dearth of candy being offered at the box office, causing popcorn sales to skyrocket. ۩ If you live in Georgia, keep in mind that it is illegal to have a picnic in a graveyard in that state. ۩ Given the rise in foodie culture, it's no wonder that there are a plethora of cookbooks available covering every imaginable kind of comestible. However, you might be surprised to learn just how far back the recording of food preparation goes: One of the earliest known recipes was written on cuneiform tablets and has been dated almost 4,000 years ago to around 1700 B.C. ۩ Those who study such things say that a giraffe can go longer without water than a camel can. ۩ People who are indigenous to the high altitudes of the Andes have more blood than do people who live at sea level -- 3 quarts more. ****** Thought for the Day: "I love deadlines. In 1919 he met a pharmacist who had a great recipe for a home-brewed root beer. Roy bought the recipe from him and opened a root beer stand in Lodi, California. • Sales were good, so he opened a second stand in Sacramento, and hired Frank Wright to help him manage it. Frank was a great employee, and in 1922 he and Roy became partners, naming the business for their initials. Roy bought a carnival wagon previously used to sell popcorn, and turned it into a drive-up root beer stand, which gave birth to the idea of a drive-up restaurant. • The idea was a hit. Roy Allen bought out Frank Wright in 1924, but retained the company’s name. He weathered the Great Depression by adding hot dogs and hamburgers. By the end of the Depression, he had 200 franchises, and by the time he sold out due to failing health there were about 450. In the 1960s there were more than 2,000 stores operating nationwide. • Today the company is the largest vendor of root beer in the nation, selling a soft drink that has changed little since it was first invented. What’s the name of the company? (Answer at top of next page) FRANCHISE STORIES: QUIZ #2 • John McCullough served ice cream from his store in Illinois in 1927. Making large amounts of ice cream involved mixing butterfat with sweeteners and stabilizers, then whipping in air and flavoring, then freezing it until it reached 23°F (-5C). At this temperature the ice cream was soft enough to flow through a spigot into tubs. The tubs were frozen to -10°F (-23C) which made them easy to ship and store. (Answer below) ------------------------------------------------------Answer: Russell Stover. A NEW FOIL • Richard Samuel was the nephew of Richard Joshua. Uncle Richard Joshua was a tobacco baron, and nephew Richard Samuel worked for him. At the time, cigarettes were wrapped in foil made from a mixture of tin and lead. As the demand for cigarettes increased, so did demand for tin foil, and it was constantly in short supply. • In 1919 nephew Richard Samuel borrowed $100,000 from his uncle, then left his uncle’s tobacco firm in order to start up a tin foil company. Other tin foil firms tried to run him out of business by lowering their prices, but then the price of aluminum dropped, and Richard Samuel discovered that making foil from aluminum was far less expensive – and far more sensible – than making it out of tin and lead. • Aluminum foil was lighter and thinner than tin foil so more of it could be rolled from a single pound of metal; it was non-corrosive; and it was shinier. He invented a way to print on it, so he could make custom wrappers for specific foods. Demand for his foil skyrocketed with the invention of the Eskimo Pie because each one was wrapped in foil. • In 1924 Richard Samuel’s firm bought out the Eskimo Pie company, which was its single biggest customer. The company expanded to produce aluminum siding, aluminum cans, aluminum bumpers, and more. Eventually the firm became the world’s third largest aluminum and packaging company. It’s best known for aluminum foil, which carries the last name shared by Uncle Richard Joshua and nephew Richard Samuel. What was their last name? (Answer below) ------------------------------------------------------Answer: Reynolds, as in Reynolds Wrap, and R.J. Reynolds tobacco. ICE CREAM ON A STICK • Harry Burt owned a candy store and ice cream shop in Ohio. Christian Nelson had recently invented the Eskimo Pie, but Harry claimed to have invented the chocolate-covered ice cream bar before Nelson invented the Eskimo Pie. • Harry’s invention had one critical difference, however. After he’d given an experimental sample to his grown daughter to eat, he asked her opinion. She said she liked it, but it was too messy and left her fingers sticky. Because he manufactured lollipops, he inserted a stick to make it easier to eat. • He designed machinery to mass-produce the product, and named his company after his belief that anyone eating it would be in a good mood. What exactly is defined as special needs in an animal? -- Darla J., Jacksonville, Fla. Dear Darla: “Special needs” defines any animal, domestic or wild, that requires additional care beyond what might be considered normal for its species. That need could be due to a physical injury, illness or emotional/behavioral problems. We most often hear about behavioral problems in dogs, especially those that were abused or abandoned. But other pets and wild animals also can have behavioral issues. It takes a lot of attention, patience and skill to care properly for these animals. Likewise for animals that come into shelters and rehab facilities that have been injured or are ill: Their emotional/behavioral issues often go hand in hand with their physical issues. People looking to adopt a pet from a shelter often are told that a dog or cat has special needs, or has specific issues that must be addressed. While responsible shelters do their best to rehabilitate a pet prior to putting it up for adoption -- including fostering the pet to more experienced volunteers who can help reduce behavioral issues -- prospective pet owners need to be aware of a pet’s health and behavioral needs and be prepared to address them. A special-needs pet will need more attention from its new family. That usually includes specific medical treatment, with more veterinary visits and a medication routine that must be met, plus more training and attention than a healthy pet might need. Owners must be prepared to dedicate extra time and expense to such pets. It’s often worth the effort. Send your questions or comments to [email protected]. Readers whose questions are published in the print edition will receive a free copy of my booklet, "Fighting Fleas," also available as a Kindle download. FRANCHISE STORIES: QUIZ #3 • Reuben Mattus sold lemon-ice from a horsedrawn wagon in New York City in the 1920s. He branched out into selling ice cream just when modern refrigeration methods made long-term storage of ice cream at home possible. In 1959 Reuben decided to found a new ice cream company that would be dedicated to providing the best possible ice cream made from the highest quality ingredients: more butterfat, less air. He needed a name for the product. He had always been fond of Denmark, so he decided a Danish name would be best. The name he chose means nothing in the Danish language, but Rueben wanted people to look at the name and think, ‘Is this imported?’ A map of Scandinavia appeared on the label for good measure. The business grew steadily and in 1983 he sold out to Pillsbury for $70 million. Today this luxury ice cream is sold all over the world. Name it. Answer #2: Dairy Queen. Answer #3: Häagen-Dazs.
