Makes: 8 servings
One of the most appetizing aspects of breakfast casseroles is that they can
actually be prepped the night before. Then all you have to do is wake and
bake. Give new meaning to rise and shine!
Ingredients
Methods/Steps:
1 lb. breakfast sausage
3 cups croutons
2 cups cheddar cheese, shredded and divided
10 large eggs
2 cups milk
1 tsp. dry mustard
1 tsp. salt
1 (10 3/4 oz.) can cream of potato soup
1/2 cup milk
30 oz. Ore-Ida country-style hash browns
Spray a 9 X 13 pan with non-stick cooking spray.
Cook sausage until browned, stirring to
crumble; drain well.
Place croutons in the pan and sprinkle sausage
over croutons.
Top with 1 cup of the cheese.
Beat together eggs, milk, mustard and salt and
pour over the top of the cheese.
Cover with foil and refrigerate overnight.
Preheat the oven to 350 degrees.
Mix potato soup with milk and pour over the top
of the casserole.
Cover with the hash browns and bake for 1 hour.
Top with the remaining 1 cup cheese and bake
for an additional 5 minutes or until cheese is
melted. Cut into squares and serve.

The annual Alpine Winter Jubilee will kick off at 5pm on Friday, February
20th with a free hotdog roast at the town ice rink; hosted by Alpine Standard.
Also that evening there will be a light parade, fireworks, and then Bingo
beginning at 7:30pm at the Civic Center.
Saturday holds many events starting with a free pancake breakfast from 8am
to 10am sponsored by the Alpine American Legion Post 46. During this time
there will also be registration to participate in the family friendly snowmobile
events hosted by the revitalized Top of the Rockies Snowmobile Club; both at
the Civic Center.
All are welcome to join in the many different snowmobile events that start at
11am next the Tavern on the Greys, and registration will continue to be open
during the event. If you don’t want to participate, come watch the fun!
Bring the children to Marge Grover Park for outdoor snow games with 1st
Bank, along with pizza from Tootsies North.
Register for a Scavenger Hunt that will send participants around town to local
businesses searching for fun items to keep!
Les Penfield will be giving free sleigh rides around town all weekend. While
searching for scavenger items or riding the sleigh around town, check out the
unique snow sculptures created by local businesses.
Saturday night offers even more fun along with a chance to win some
great prizes! This year’s Casino night kicks off with dinner for purchase by the
Alpine Fire and EMS Auxiliary at 5:30 and then games will begin at 6:30.
All profits from the Casino Night will benefit charities in the Star Valley
Community.
