Chef’s Corner
Albert Moore and his family are new cove
residents. What a surprise when neighbours
found out that Albert has spent over 25 years
of his career as a private chef on super yachts.
He has had the opportunity to work in many
restaurants around the globe and had the
pleasure of working with some amazing two
and three hat-acclaimed chefs.
Most recently and, importantly, Albert is a
private chef to his 6-year old daughter Sabela
(pictured below) who is, by far, his most
demanding client and
customer!
Over coming months

his favourite recipes and
perhaps a few war stories
about his chefing time
abroad and the famous
people he has cooked for
Sabela Moore

Rice Vinaigrette for Oysters
Ingredients: 4 tsps finely grated
Ginger, 1 ½ tabs rice wine vinegar,
4 tsps castor sugar, 4 tsps soy sauce, 4
tabs grapeseed oil, 2 tabs lemon juice.
Method: Combine all ingredients and
use as a dressing on fresh shucked
oysters or grilled salmon. This dressing
will keep in your fridge for two weeks.
Cucumber Dill Salsa
Ingredients: 2 cucumbers seeded
unpeeled and diced, 1 red onion finely
diced, juice of 2 lemons, 2 tabs chopped
dill, salt and pepper to taste
Method: Combine all ingredients to
accompany fresh grilled or baked fish on
those hot summer days in the Cove.

THE TENNIS SEASON is well upon us and by the time
you read this all the hotshots will have departed
Melbourne for the next round of the world circuit. Good
luck to Australia’s new crop of emerging talent.
Meanwhile…back in sunny North Arm Cove life has
returned to normal after a very busy summer holiday
period, with solid court bookings from both holidayers/
tourists and the parent/grandparents looking for an
activity to wear the kids out for a few hours.
Unfortunately, after Christmas we had a booking
from a group who decided that they would use the court
for a cricket match!
This is the first time we have had misuse of the court
(replacement of the playing surface can be
$15, 000-$20,000). Luckily, there was no apparent
damage but a cricket bat can quickly destroy the turf
and playing surface.
We ask all residents to keep an eye out for
vandalism and misuse of the court, community centre,
toilet and garden club facilities and report it as soon as
possible to the tennis phone number (on the court fence)
or 000 if necessary.
On a brighter note, a young-ish, very proud Sydney
father and his teenage daughter chose to stay at North
Arm Cove while she competed in a top junior tennis
tournament in Newcastle. They were amazed to find it
had a top grade tennis court in perfect condition.
We left them practicing, hoping that he did not want
us to play his 12-year old daughter, who was absolute
dynamite!

Drainage Plans, intended to occur
as part of the February North Arm
Cove Residents Association
(NACRA) meeting has been
rescheduled for 5pm Tuesday,
February 24, 2015 at the
Community Centre.
The NACRA meeting will,
however, still go ahead as planned
on Saturday February 14 at 10am,
possibly with an alternative guest
speaker.
The meeting will also be exploring
issues of concern to local residents
with a view to lobbying Council,
ministers and MPs. (Imminent
elections are always a good time for
that.)
Two topics that we know have
rankled a number of locals over the
past couple of months have been
the limited availability of medical
services during the holiday break;
and a dramatic decline experienced
by many residents over the past two
months in free-to-air TV reception.
If you have thoughts on these or
other issues you would like to see
addressed, come along to the
meeting and have your say.

tFORMER COVE RESIDENT, Richard (Rick)
Milburn, aged 88, a resident of The Grange, Tea Gardens,
who served four years as an Able Seaman and Radar
Operator in the British Royal Navy during WWII on the
Russian Convoy ships, was recently awarded the Medal of
Ushakov.
The Russian Government requested the medal be given
and Rick said he will wear it with pride alongside the
small Arctic Star awarded a few years ago by the British
Government.
tCove residents involved in fundraising two years ago for
a special wheel-chair enabling the disabled easy
access to Hawks Nest beach arrived at Hawks Nest Surf
Lifesaving Club at the end of last month.
tCove residents celebrated Australia Day 2015 in fine
style despite the weather; parties were held at private
homes plus a community party was held at Heros Beach.

Recognition for young and ‘more
mature’ writers
THE IMPRESSIVE WRITING skills of Tea Gardens
Public School students were recognised by the cove’s
Fellowship of Australian Writers Inc branch at the end
of the 2014 school year.
‘The winning stories were excellent, exhibiting
maturity well beyond the age of the writers, with many
other entries displaying great potential,’ a spokesperson
for the writing group said.
The short story competition was open to Years 4, 5
and 6 students at both Tea Gardens and Karuah Public
Schools.; Karuah students unable to enter this year as
they were involved, at the same, in a Newcastle Herald
competition.
Elizabeth Deane and Maureen Kelly attended Tea
Gardens Public School to present the prizes.
Winners: Year 4: Toby Avery (Fisher returns), Year 5:
Charlie Pietsch (Wizard Blackbeard and the Village of
Snow) with a highly commended certificate and prize
awarded to Faith McKay (Agnes Obell: Beyond the
Waterfall).
Over the Christmas break members of the
writing group were also busy writing, participating in
the Storytelling in Great Lakes project - see front page
story.

Elizabeth Deane (Memories abound seated at a
desk), Olly Griffin (1940 wartime memories of an
evacuee) and Maureen Kelly (Sirens Shelters
Sleeplessness 1942-1945) have formed part of
the council’s travelling exhibition arriving early
March at the cove’s community library.
Following the exhibition’s official opening,
Elizabeth’s story was published in Great Lakes
Advocate - well done!
Facilitator for our area, Kerryan Griffin, is also
a member of the writing group.
Members re-commence their writing year
Thursday, February 19 6.30pm at the community
centre. New members are most welcome.

‘We appreciate the input of over
1,000 volunteers in our community.’
He thanked the volunteers, Judy
Hall, Margaret Guider, Jeni Monks,
Maggie Poole, Sue Filson and
Kerryan Griffin for giving so much
time and energy to running the workshops and visiting nursing homes.
He concluded by thanking
Community Services officer Kellie
Richardson for her management and
co-ordination of the project within a
very short timeframe.
