Thaw in refrigerator ensuring you allow 13 hours
per kg. Preheat oven to 180°C and remove all
packaging. Rinse thoroughly inside and out and
pat dry with paper towels.
Stuff the turkey leaving enough room for stuffing to
expand. Cross the legs over each other and tie with
cooking twine. Spray pieces of aluminium foil with
oil to prevent it sticking to the turkey and use the
foil to protect the hock ends, wings and the breast.
Place the turkey breast side up on a rack in a
roasting dish. Cook for about 45-50 minutes per kilo.
30 minutes before the end of the calculated cooking
time, take from the oven. Remove foil and pierce
the skin several times to allow self basting and
browning. Return to oven. After the recommended
cooking time, remove from oven. The turkey is fully
cooked when the juices run clear. When fully cooked,
transfer the turkey to a carving platter. Cover with
foil and allow to stand for ten minutes.

REMOVE FOIL. Place on rack in oven proof dish with
1⁄2 cup water.

Preheat oven to 180ºC. Cook for approx. 50 minutes
per kilo. Remove foil and roast for the last 30 minutes
of cooking time to brown.

Oven Roasted Turkey Half Breast

Ingredients
16 x 20g slices Ingham Oven Roasted Turkey Half Breast
or Turkey Double Breast
1/3 cup sour cream
2 tablespoons bottled horseradish
11/2 tablespoons dijon mustard
Salt and freshly ground black pepper
8 slices fresh wholemeal bread
Rocket, ends trimmed, washed, dried, to serve
Method
• Combine the sour cream, horseradish and mustard in
a small bowl. Season with salt and pepper.
• Slice bread thickly into 8 slices. Arrange the rocket
and turkey over 4 of the slices of bread. Drizzle with
the horseradish cream and top with the remaining
bread. Serve immediately.

Cooking Instructions
Turkey - Whole, Frozen & Fresh
• If frozen, thaw for at least 48 hours in refrigerator or until fully thawed
• Remove neck and wipe inside and out with paper towels
• Fill neck and body cavities with prepared stuffing and secure by sewing or by skewer
• Tuck wings under turkey and tie drumsticks together
with string
• Rub skin lightly with melted butter or oil, and dust with
salt and pepper
Preheat oven to 180ºC. Cover legs and wings with foil
and roast for suggested cooking time on pack.
Approx. 30 minutes before turkey is cooked remove foil
and pierce skin in several places to allow self basting and
browning.pasta with green salad, garnish with chives.
Turkey Buffé
• If frozen, thaw in sealed bag by placing in refrigerator
for 1-2 days
• Place Buffé breast side up in a roasting dish with a little
water and cover with foil
Preheat oven to 180ºC. Roast for approx. 40 minutes per
kilo. Remove foil for last 30 minutes to allow self basting
and browning.
Deboned Turkey Buffé
Turkey Double Breast with first wing joint
• Thaw in refrigerator for at least 24 hours
• Place turkey skin side up in roasting dish on a rack
• After roasting, cover turkey with foil and allow to stand
for 10 minutes before carving
Oven Bake: Preheat oven to 180ºC. Roast turkey
for 2-21/2 hours until golden brown.
Turkey Carvery Roast
• Thaw in refrigerator for at least 24 hours
• Remove plastic packaging
• Do not remove foil
• Not suitable for microwave cooking
Preheat oven to 180ºC. Cook approx. 50 minutes per kilo.
Remove foil and roast for the last 30 minutes of cooking
time to brown.
Turkey Thigh Roast
• Thaw in refrigerator for at least 24 hours
• Remove plastic packaging
• Do not remove foil
• Not suitable for microwave cooking
Preheat oven to 180ºC. Cook approx. 2-21/2 hours.
Remove foil during last 10-15 minutes of cooking time
to brown.

Turkey Tenderloins
• Thaw in refrigerator for at least 24 hours
• Cover with foil when oven baking
Pan Fry: Preheat oil to medium heat and cook for
10-15 minutes turning once.
Oven Bake: Preheat oven 180ºC. Roast in lightly
oiled baking dish covered with foil for 45 minutes.
Remove foil for last 10 minutes of cooking time
to brown.

turkey is one of the most spectacular meals
to serve to your customers. It’s also one
of the simplest and potentially creative.
General Turkey Tips

Turkey can be handled, cooked and stored in the
same way as chicken. There are no special requirements
in its handling.
After purchasing fully cooked smallgoods, ensure they
are stored in the refrigerator with their wrapping sealed
until required. After opening, they must be consumed
within 2-3 days.
Cooking Tips

Appliance temperatures can vary, you may need to
adjust cooking times accordingly.
Poultry is fully cooked when a core temperature of
82ºC is achieved.
Handling and Storage

Defrost in the refrigerator only, not on the bench.
Use separate cutting boards and utensils when
handling raw and cooked poultry. Wash these
thoroughly with hot, soapy water before and
after handling.
If you cook poultry to eat later, refrigerate while hot.
Always store cooked foods above raw foods in
the refrigerator.
Keep fresh food refrigerated at or below 4°C.
Keep frozen food at or below minus 18° C.
Once poultry has been thawed, do not refreeze.
General Roasting Tips
•

Stuffing does not have to be cooked inside the Turkey.
It can be placed in the pan around the roast, or baked
separately in foil or moulds. A shorter cooking time
should be used for the stuffing.
Remember, glazes which contain sugar may burn easily.
Brush on these glazes 20-30 minutes before the turkey
is cooked.
