Organic Farmed Salmon
Organic farmed salmon are now available at
Wegmans stores. The unusual supply story starts
with the fact that the USDA National Organic Program
has no standards for seafood. But, our shoppers are
increasingly seeking organic food. So our seafood
guy Carl Salamone went fishing abroad and found
that the European Union (EU) does have organic
certification. He located a new supplier/partner in
Ireland, then visited their operations months ago
as well as quite recently, and was satisfied that the
rigor of their standards was consistent with our
own high standards.
Murphy’s Irish Seafood is a small family-run operation,
in business since 1984. They have their own hatchery
for “starter salmon”(my words; fisherfolk call them
smolts). The hatchery is in the Comhola Valley, on
the fast-running Comhola River (for those Ireland
enthusiasts who have lived or traveled there).
The pens for the farm are in the best aquaculture
classification, one mile from shore in the deep waters
of Bantry Bay, fully exposed to the strong currents and
natural elements of the Atlantic Ocean. (A criticism of
some farmed operations in other parts of the world
is that tidal currents are not strong enough to protect
the waters.) The feed is sustainable (trimmings from
other processed fish items or Marine Stewardship
Council certified). Once harvested, the fish are
immediately cleaned and flown to Wegmans processor
in Rochester, NY, within 24 hours of leaving the water.
This is an additional choice, in between the value
price of regular farmed salmon to provide a consistent
supply year ‘round and the much higher price for
wild-caught fish, limited by quotas set to protect
future generations. Right now, the organic salmon
are delivered to our stores just once a week, available
Thursday-Sunday, while supplies last.
