Pampero Especial Rum, crème de mûre, blackberries, a dash of fresh orange juice and Champagne served in a Champagne flute. PLAYBOY FIZZ A Champagne cocktail for all aspiring Playboys, with aphrodisiacal qualities - need I say more! Forzen Ketel One vodka, absinthe, lump of sugar, fresh lemon juice and Champagne. MAYFAIR FIZZ # 2 Our entry for the UK Bartending Guild’s Bartender of the Year competition. This drink is like no other; rich, elegant, perfectly balanced, and displays pure decadence and sophistocation. Courvoisier VSOP Cognac, Benedictine, white grapefruit juice, agave nectar, a whole quail egg and a hint of sea salt. Served tall in a flute and topped with Champagne. VELVET ROSA This is named after Salvatore’s mother and reflects her bubbly, gentle, and loving nature. Bacardi Superior Rum, peach schnapps, cranberry juice, white peach purée and Champagne. BUNNY BUBBLES This drink will one day be as iconic as the Bunny Girls who serve it! Benedictine, fresh raspberry puree, pomegranate juice and Champagne. FRENCH 75 A creation from Harry’s Bar, Paris; it was orginally a short drink caled the 75 cocktail, celebrating the fire power of the French 75 light field gun of World War 1. Tanqueray Gin, fresh lemon juice, gomme syrup and Champagne. DELUX CLASSIC CHAMPAGNE COCKTAIL £40.00 Our adaptation of the 1889 ‘Classic Champagne Cocktail’. For this we use a limited edition 150 year old orange Cognac liqueur, the Maestro’s own cocktail bitters, sugar, and topped with one of our favourite Champagne Grand Marnier Cent Cinquantenaire, Salvatore’s bitters, a lump of sugar, topped with Ruinart Blanc de Blanc Champagne. BIG SPENDER £40.00 Made with super premium Tequila this cocktail is the height of sophisticated elegance. Gran Patron Platinum, Cointreau, agave syrup, cranberry juice and Dom Pérignon ‘03 vintage Champagne. This drink is garnished with a dollar bill, signed by The Maestro himself. 3 CLASSIC COCKTAILS £15.00 MARTINEZ This amazing cocktail dates as far back as 1887; paving the way for the Martini. Old Tom Gin, Martini Rosso, Maraschino Liqueur and Angostura bitters, served in a cocktail glass. MIXED DRINKS FROM OUR FAVOURITE FOUR BOROUGHS: THE MANHATTAN Dating from the 1870s, this drink was reputedly created for Lady Randolph Churchill in the bar at The Manhattan Club. Canadian Club or Pikesville Rye Whiskey, Martini Rosso and Angostura Aromatic Bitters, served ‘up’ in a cocktail coupette. If you wish to explore the rest of New York please ask your host for THE QUEENS, BROOKLYN or trusty BRONX COCKTAIL. MAI TAI Created in 1944 by Victor Bergeron. Taken from ‘Mai Tai Roa Ae’ which translates as ‘out of this world’. Aged Rum, Orange Curaçao, lime juice, orgeat syrup served over ice in an old-fashioned glass. RAMOS FIZZ In 1888 Henry Ramos first shook his cocktail at the Imperial Cabinet Saloon, New Orleans. In 1907 he moved to larger premises, The Stag Saloon, where his Fizz became so popular he employed up to 35 shaker boys to meet demand. Gin, fresh lime and lemon juice, orange flower water, sugar, fresh cream, egg white and soda water, served over ice in a high ball glass. SAZERAC Another legendary Cocktail created in New Orleans, at the Sazerac Coffee House which opened in 1853. The original was made with Cognac but it can be made with Rye Whiskey if you prefer. Cognac VSOP or Rye Whiskey, absinthe, Peychaud’s bitters and a lump of sugar, served straight up in a Cognac glass. PISCO PUNCH First created in the Bank Exchange, San Francisco, during the gold rush of the 19th Century. This drink became notorious throughout the bay and beyond. Poet and Novelist, Rudyard Kipling, once described this cocktail as containing ‘the glory of a tropical dawn’ and ‘the red clouds of sunset’. Peruvian Pisco, homemade marinated pineapple syrup , fresh lemon juice, and club soda for fizz. RUM SWIZZLE Although uncommon, this drink predates 1788. Originating from the southern Caribean Islands, we use a combination of two rums and add falerum to this classic tropical cooler; our tribute to the Swizzle Inn, Bermuda, their moto being ‘Swizzle Inn, Swagger Out’. A combination of Havana 3 year old rum, fresh lime juice, homemade falernum, and a hint of Rhum Agricole and liquorice bitters, swizzled with crushed ice and served tall. 4 P R E -DINN E R COCK TA I L S £15.00 OUR SHERRY COBBLER Our interpretation of the 1860’s classic cocktail, The Sherry Cobbler; pre dinner classic or a complex cooler to suit any occasion. A gentleman’s measure of Bristol Cream Sherry, combined with elderberry sugar, fresh citrus, Italian sour cherry wine, served over crushed ice and garnished with seasonal fruit. BRANDY CRUSTA A classic from Jerry Thomas’ 1862 publication ‘The Bartender’s Guide’; the first edition of which is displayed in our vintage cabinets. A revolutionary cocktail that paved the way for classic cocktails such as the Sidecar, White Lady and Margarita. Cognac, Orange Curaçao and a hint of fresh lemon juice, classically served with pared lemon peel in a sugar crusted glass. NEGRONI One of our favourite pre-dinner cocktails. A 1920 classic with the right balance of sweet and bitter to stimulate the appetite. Count Negroni we salute you! Tanqueray Gin, Campari and sweet vermouth served over ice in an old-fashioned glass; just the way we love it. PENDENNIS COCKTAIL A forgotten classic from the Pendennis Club, Louisville, Kentucky; beautifully balanced, simple yet complex; an old favourite of ours. Gin, homemade apricot brandy, Peychard’s Bitters and fresh lime juice. Served ‘up’ in a cocktail glass. JALISCO COCKTAIL An aperitif to stimulate the palate, classic flavours with a modern interpretation. Don Julio añejo, Carpano Antica Formula, Cointreau and Salvatore’s bitters served short and strong. THE ITALIAN SPRITZ For those who like pre-dinner bubbles and bitters; this drink originates from Northern Italy but is now a firm favourite throughout Europe and beyond. A generous measure of Aperol, topped with Italian Prosecco and garnished with orange. This drink is served over ice in a large wine glass. THE AVIATION This drink was created in the earliest days of aviation, and first appeared in print in 1916. The drink represents a beautiful blue sky. Gin, maraschino liqueur, crème de violette, fresh lemon juice, served in a cocktail glass. PAPA HEMINGWAY This drink came out of the Floridita Bar, Havana. Needless to say it was named after the great man himself and was created by the bartender Constantino Ribalaigua. Bacardi Superior Rum, maraschino liqueur, fresh grapefruit and lime juice served in a cocktail glass. 5 M AR T IN I COCK TA I L S £15.00 MY MARTINI This is the Maestro’s masterpiece, using the method he developed whilst in residence at The Dukes Hotel in the 1980s. Many say that this is the best martini in the world, try it and see if you agree! The frozen gin or vodka of your choice with Extra Dry Martini. BREAKFAST MARTINI This is Salvatore’s signature drink, a modern classic popular throughout the world. It has texture and a bitter sweet flavour from the marmalade. Bombay Sapphire Gin, Cointreau, fresh lemon juice and the finest orange marmalade. SPICY FIFTY Highly recommended, another signature of Salvatore’s, loved by many and inspired by his former home at Fifty St James. We are sure that everyone will be happy to see this cocktail back on the menu. Stolichnaya Vanilla Vodka, elderflower cordial, fresh lime juice, honey syrup and chili pepper. VESPER From the classic book (and film) Casino Royal, the Vesper was the idea of Ian Fleming, and named after the character of the beautiful girl who stole the heart of James Bond. We follow the classic recipe that calls for Gordon’s Gin. Gordon’s Gin, Smirnoff Red Vodka and Lillet Blanc. GIBSON Created for American artist Charles Dana Gibson at the Players Club Manhattan in the 1940’s, who asked for something different. Gin or Vodka, dry vermouth and two cocktail onions. SALTY MARTINI A modern twist on the on the classic Dry Martini. A fascinating flavour for the most demanding of palates. Tanqueray Gin, Tio Peppe dry sherry and a splash of caper berry brine. ECSTASY MARTINI Here’s a cocktail guaranteed to raise your spirits; with every sip you take, you will discover the world has a new meaning. This drink is for those who like their cocktails served straight up and strong. Frozen Belvedere Vodka, Cointreau, absinthe and sugar. RED EARL The interesting aspect of this drink is its natural fresh berry flavour combined with a sweet and lingering ginger after taste. Ketel One Vodka, limoncello, raspberry purée, fresh raspberries, fresh ginger, served chilled cocktail glass. PLAYBOY MARTINI £20.00 Super dry and super cool for the ultimate man about town! Frozen Tanqueray No. Ten, Salvatore’s bitters and Champagne. 6 S H O R T & S E D U CTI V E £14.50 GODFREY This cocktail has a fresh flavour combined with a warm finish; it’s a great medley of ingredients. Cognac VSOP, Grand Marnier, crème de mûre, fresh lemon juice and blackberries served over ice in an old-fashioned glass. THE CLOVER CLUB The signature drink of the Philadelphian Gentlemen’s Club of the same name. This drink was first created at the Bellevue-Stratford Hotel, 1911, for the many distinguished patrons, and club members, of their oak-paneled lounge. Tanqueray Gin, Noilly Prat dry vermouth, fresh lemon juice, homemade raspberry syrup and egg white, served ‘up’ in a cocktail coupette. MARKED MAN A true Sopranos’ cocktail, a mix of American and Italian breeding. Full of vigour and enough spice to last the night. Maker’s Mark Bourbon, Campari, limoncello, fresh orange juice, fresh mint and ginger served in a cocktail glass. JAMAICAN SANGRIA A heavenly balance of flavours for a sangria with a Caribbean twist. Jamaican rum, red wine, homemade apricot brandy, framboise liqueur, fresh orange juice and honey syrup served in a wine glass. MAESTRO This cocktail is after Salvatore himself. A wonderful combination of sweet, sour, and earthy flavours. Like the great man, it is truely unique! Ketel One Vodka, fraise liqueur, orange juice, maple syrup, aged balsamic vinegar and fresh strawberry purée. TENNESSEE SQUIRREL A magical concoction, a fruit-filled refreshing interpretation of the traditional ‘Sour’. Jack Daniel’s No.7, amaretto, fresh passion fruit and lemon juice served over ice in an old-fashioned glass. SUNBURN MARGARITA This recipe has it all, warm and sexy with a wonderful deep colour reminiscent of the Mexican sun. Just like the sun, too much and you will get burnt! Reposado Tequila, fresh lime juice, agave, pomegranate, passion fruit and jalapeño pepper served in a cocktail glass. JAPANESE PEACH TREAT Let your senses be indulged by this Asian inspired cocktail. Yamazaki 12 Year Old Japanese Whisky, crème de pèches, elderflower cordial, preserved yellow peaches, lemon juice. Topped with an elderflower foam. THE LATE NIGHT ELIXIR £18.00 A drink to be sipped slowly at the end of an evening: pure decadence. Zacapa 23 Year Old Rum, Benedictine, sour cherry wine and a hint of rich chocolate cocktail bitters. 7 L O NG & L U S CI OU S £14.50 GRACE This is an elegant, long, refreshing drink with excellent flavour matching and a great texture. Grey Goose La Poire Vodka, fresh pear, apple and lemon juice, honey syrup, lemon grass and fresh mint served over crushed ice in a highball glass. BOHEMIAN JOURNEY This drink will take on a journey from France to the tropics, as the bohemian artists used to do in the 18th century. Courvoisier VSOP Cognac, fresh pineapple, lemon juice, sugar syrup and home made spiced wine eeduction, served tall, in a highball glass. VA VA VOOM An interesting combination producing a taste that races along. Belvedere Vodka, passion fruit syrup, mint, fresh apple and lime juice served over crushed ice in a highball glass. SGT. Pepper A heavenly balance of sweet and spicy flavours with this delicate yet distinctive Whisky. Bowmore 12 y.o., honeyed apricot brandy, refreshing ginger ale and a fireball sprinkle of crushed red peppercorn over crushed ice. It is garnished with mint and served in a metal julep cup. TROPICAL BUTTERFLY Close your eyes, sip, and you will find yourself in paradise. Tanqueray Gin, passion fruit juice, elderflower cordial, pear puree and fresh strawberries served over ice in a highball glass. CAMPARI NOBILE This unique bitter-sweet cocktail won Salvatore the title of Bartender of the Year in 1993. Ketel One Vodka, Campari, limoncello, fresh orange juice, raspberry purée and bitter lemon served over ice. PLAYBOY COOLER Served in the 70’s at the original London Playboy Club, it was one of the most popular drinks at the time. How our tastes have changed! Appleton VX rum, Tia Maria, fresh pineapple and lemon juice and Coca-Cola served over ice in a highball glass. P.B. PAINKILLER £15.50 An East London twist on the Caribbean classic; the orginal Painkiller Cocktail was the best kept secret of the Soggy Dollar Bar, White Bay, British Virgin Islands. (for the tale on how this bar got it’s name, please ask your host) Mount Gay XO Rum, Hoxton Gin, fresh pineapple juice, fresh pressed orange juice and coconut cream. Served ‘tall’ over crushed ice. JULIO’S HOOCH JUICE Created in tribute of our friend Julio Bermejom, of the world famous Tommy’s Tequila Bar and Restaurant, San Francisco. We hope he enjoys it as much as we do. El Tesoro Silver Tequila, elderflower cordial, fresh white grapefruit juice and honey, topped with Viru Estonian Lager. 8 OUT O F THE OR D I N A R Y £17.00 READY TO DRINK: CARBONATED CORPSE REVIVER # 2.012 A 2012 interpretation on Harry Craddock’s infamous morning ‘pick me up’, the Corpse Reviver # 2, first mentioned in Savoy Cocktail Book 1930. We have played on the current supermarket trend of bottled ‘Ready to Drink’ cocktails by carbonating, bottling, and sealing this classic to be opened for your enjoyment at your table. Tanqueray Gin, Orange Curaçao, Cocchi Americano, fresh lemon juice, a hint of Parisian absinthe and lengthened with white wine. Can be drank by one, or shared between two. N.B. As Craddock clearly explains: ‘four of these taken in swift succession will unrevive the corpse again’ THE SECRET GARDEN Inspiration first came for this drink down at the bottom of the garden, among the birds and the bees. A refreshing light rum cocktail with a taste unlike any other. Bacardi Superior Rum, pear purée, fresh lime, homemade falernum and fresh asparagus. Shaken and served straight up. BARREL AGED COCKTAIL: BLOOD ‘N’ SAND Blood ‘N’ Sand is a classic silent-movie romance. The cocktail is a classic mixed drink that includes Whisky. It’s not the easiest man to marry, but its improbable wife, sweet vermouth, and mistress, cherry brandy, get along really well. Johnny Walker Gold Label Whisky, sweet vermouth and cherry brandy are laid to rest in an oak barrel to mature in depth and character. Served ‘short’ in a cocktail coupette finished with a blood orange foam. WASABI BLISS # 2 Taking inspiration from our friends in The East. Sugar, spice and all things nice. Ketel 1 Citron Vodka, sake, pear puree, elderflower cordial fresh, lemon juice, egg white, and a hint of wasabi! Served in a traditional Japanese sake box. PANDORA’S BOX: THE ORIENTAL ROSE What lies within Pandora’s Box, good or evil, you decide? Martini Rosato infused with rosebuds, Sake, Cointreau, cranberry juice, fresh lemon, and a touch of egg white. 9 AF T E R DINN E R COCK TA I L S £15.00 BRANDY ALEXANDER By far one of the most sophisticated after-dinner drinks, this was at the height of its popularity in the heady 1960s and 1970s. Courvoisier VSOP Cognac, brown crème de cacao and fresh double cream served in a cocktail glass. STINGER A fine drink that was served shaken and straight-up in a cocktail glass in prohibition days, and that’s how we serve this great digestive cocktail. Courvoisier VSOP Cognac and white crème de menthe served in a cocktail glass. SILK STOCKING One that brings back memories of the past, with a creamy chocolate and cinnamon flavour. Jose Cuervo Tradicional, white crème de cacao, double cream, grenadine, garnished with cinnamon served in a cocktail glass. DOBBS This is the butler’s recommendation for an excellent digestive drink, especially good after a heavy meal late in the evening. Fernet Branca, white crème de menthe, served straight up in a cocktail coupette NON-AL C O HOL I C COCK TA I L S £9.00 THE SPORTSMAN This drink is for anyone wanting something refreshing and light. Homemade lime cordial, fresh lemon juice, rose syrup and tonic water, served over ice in a ‘Sling’ glass. GINGER ALERT A cocktail designed to give your system a wake-up call. Fresh apple and lime juice, pear purée, fresh ginger and ginger ale served over ice in a highball glass. MANGOCOCO Exotic flavours with a smooth edge. Mango purée, fresh passion fruit and juice, coconut cream served over crushed ice in a highball glass. WHITE SANDY BEACH Salvatore first created this drink when he was in the Little Dix Bay, British Virgin Islands; it is inspired by its beautiful beach. Fresh pineapple juice, coconut cream, double cream and banana, served in a highball glass. COCONUT AFFAIR Full of texture and flavour. Coconut Cream, fresh orange juice and pineapple juice, fresh strawberries and double cream served over crushed ice in a highball glass. A PROMISE FROM THE PROVENCE Light, floral, and refreshing; inspired by the French lavender fields. Cranberry juice, agave nectar, fresh lavender, lemon juice served over ice in a stemless wine tumbler. 10 AT PLAY BOY CLU B LO N D O N VIN TAGE COC K TAIL S Here is my selection of old classics created by some of the founding fathers of the cocktail world. I have sought out vintage products as close to the originals used that I could find to give you a true taste of cocktail history, the ultimate experience for the discerning cocktail lover. VINT A G E COCK TA I L S HONEY BEE £275.00 This drink is a classic from the 1930s made with rum, honey and fresh lemon juice. The recipe is taken from The Fine Art of Mixing Drinks by David A. Embury, which called for Jamaican rum. For this drink the closest I could find is J Bally Martinique Rum 1929. WHITE LADY £350.00 Created by Harry Craddock legendary bartender from the Savoy Hotel, Harry took up residence at the Savoy in 1920 where he reigned until 1939, after being exiled by prohibition. Harry immortalised his creation in The Savoy Cocktail Book which he compiled in 1930. For this recipe I am using Gordon’s Gin from the 1930s and Cointreau from the late 1930s and fresh lemon juice. SIDE CAR £350.00 This drink was made famous at Harry’s New York Bar Paris during the First World War, served for an eccentric Captain who turned up in a chauffeur driven motorbike sidecar. In his 1922 book Harry credits the recipe to ‘MacGarry’ the popular bartender at Buck’s Club, London. For this recipe I am using Hedges and Butler 1914 Cognac and a Cointreau from the late 1930s and fresh lemon juice. BRANDY CRUSTA £425.00 The first published recipe for this cocktail appeared in 1862 in ‘How to Mix Drinks‘ by Professor Jerry Thomas, the esteemed father of Bartending. The original Crusta was created at New Orleans’ City Exchangein the heart of the French Quarter by Joseph Santini in 1850, the first time that citrus juice was introduced into the list of ingredients for a cocktail. For this recipe I am using Monnet Cognac 1858 and Dubb Orange Curaçao late 1860s and fresh lemon juice, the drink will be served as Jerry Thomas specified in a sugar crusted glass lined with pared lemon peel. GIN COCKTAIL £450.00 Another recipe from Jerry Thomas’ 1862 publication, This is one of the very original cocktails. In 1824 there is a published reference to a New York porter saying about his dead friend that he was “the kindest soul that ever poted a gin cocktail”. The Gin of choice at that time was Holland Gin. To recreate this recipe I am using Fogkink Amsterdam Gin from the late1800s, Dubb Orange Curaçao from the late 1860s, Angostura Bitters from 1915 and homemade gomme syrup. OLD FASHIONED £500.00 Although claimed as their own by the Pendennis Club in Louisville, Kentucky founded in 1881, there are even earlier published references, when the Chicago Tribune quoted a prominent bar-tender as saying ‘The old fashioned cocktails are still in vogue; cocktails made of loaf sugar and whisky... Rye Whiskey is called for more than Bourbon. The first recipe appears in a rare book entitled Bartender’s Manual by Theodore Proulx in 1888. To recreate this recipe I am using an old American preprohibition Whiskey, Angostura bitters from 1915 and a lump of white sugar. VINT AG E COCK TA I L S SINGAPORE SLING £750.00 The most commonly used recipe for a Singapore Sling bears little resemblance to the orginal Singapore Sling created by Ngiam Tong Boon, a bartender at the Raffles Hotel, Singapore in 1915. Originally intended as a woman’s drink, this long, exotic cocktail is now enjoyed by both sexes in many bars throughout the world. The original recipe of this legendary cocktail was a favourite of, among others, the famous writers Somerset Maugham and Joseph Conrad. To recreate that infamous classic we use New York Gin c1910, Peter F. Herring Kirsebær (the predecessor of the modern Cherry Herring) c1905, cointreau c1920, benedictine c1930, fresh orange, pineapple and lemon juice. BACARDI COCKTAIL £1250.00 This cocktail was discovered by the Americans in Cuba during prohibition, it quickly became central to the cocktail’s golden age. So much so that by 1936 the Bacardi Company went to court to protect their prestigious brand, since then this drink can only be made using Bacardi rum. The first published Bacardi Cocktail recipe appeared in Drinks by Jacques Straub in 1914. For this recipe I am using Bacardi from circa 1905 and Grenadine from the1930s, home-made gomme syrup and fresh lime juice. SANTA CRUZ RUM PUNCH £2,000.00 This drink is also listed within the pages of the Jerry Thomas’ 1862 Bartenders Guide. Thomas’ recipe states a large measure of Santa Cruz rum. As this rum can no longer be sourced we use a St Croix rum of similar age. Both rums orginate from neighbouring distilleries on the U.S. Virgin Islands. These rums are truely unique and extremely rare. St Croix Rum c1890, Jamaican Rum c1900, 3 dashes of lemon juice, an orange slice and powdered white sugar. SAZERAC £2,500.00 This American classic is a sublime sipping drink. Legend has it that its origins began in Peychauds Pharmacy, New Orleans where Peychaud himself, a young Creole apothecary, would serve a drink based on cognac mixed with his proprietary bitters to treat stomach aches and other illnesses, the brandy and bitters buzz caught on with Peychaud’s friends and then in the coffee houses. In 1853 the Sazerac Coffee House opened in a rough back street known as Exchange Alley. The Coffee House made the brandy cocktail a rage and the ingredient that gave it its name was the bar’s Cognac, exclusively imported from France, Sazerac de Forge et fils. Around 1870 the Cognac was replaced with Rye whiskey, probably due to the phylloxera epidemic that devastated the European vines and the production of Cognac, and a taste of Absinthe was added. For you I will reproduce the original cocktail and use a Sazerac de Forge et fils from 1805 simply made with Peychaud bitters and sugar, an experience only available to the privileged few. SALVATORE’S LEGACY £5,500.00 With this drink I wish to be written within the pages of history. In accordance to the Guinness Book of World Records, using some of the oldests bottles within my collection, I have created the oldest and most expensive cocktail ever produced.
