3 cups kale, cut thin
Prep salad ingredients and add to serving bowl. Drizzle with cashew cream sauce. 3 Massage
dressing into kale leaves gently. Serve.

1 Tbsp seaweed flakes
CASHEW CREAM
1 cup cashews, soaked 4 hours
(or overnight) in water
2 Tbsp coconut oil
2 Tbsp lemon juice
1/2 cup water
1/2 small onion, chopped
Dash fresh herbs or spice your choice
of basil, rosemary, tarragon, dill, chilies
Sea salt and pepper to taste

CASHEW CREAM
In a blender, add all ingredients. Blend until
smooth. Season to taste and serve salad. Optional:
can also be warmed in a small sauce pan over lowmedium heat (do not overheat). Serve over brown
rice pasta, stuffed peppers or steamed veggies,
etc.

Seaweed Burrito Rolls

Seaweed (in this case, in the form of nori paper) is incredibly nutrient-dense,
rich in essential minerals and vitamins that support overall health, but also
metabolism. One mineral abundant in seaweed is iodine. Iodine is essential

thyroid function.

Basil Hummus and Veggies

Easily digested foods, free of the usual sensitivity-aggravating ingredients, are a
priority when looking to minimize digestive stress and to get efficient energy from
the food you eat. Hummus and veggies are a great option. Add some tasty herbs to
your favorite basic hummus recipe to increase chlorophyll content and even boost
antioxidant and micronutrients.
HUMMUS
2 cups fresh basil, packed
2 15 oz. cans chickpeas, rinsed BPA-free cans, such as Eden brand
2 cloves garlic
1-2 tsp cumin
1/2 tsp sea salt
1 lemon, juiced
2 Tbsp tahini
1/2 cup water
3 Tbsp Vega Antioxidant Omega Oil blend or extra virgin
olive oil
VEGGIE SUGGESTIONS
Carrots, radishes, string beans, sugar snap peas,
cauliflower, broccoli, cucumber, peppers, cherry
tomatoes

and blend. 2 Thin with a couple Tbsp of water,
if needed. 3 Empty contents into a bowl and
drizzle small amount of Omega Oil blend onto

Mix all above ingredients in a bowl, cover and

Nacho Cheese Add in ½ tsp of garlic powder, ½
tsp of onion powder, ½ tsp more cumin and ¼
cup chopped jalapenos. Enjoy with veggies or
homemade baked chips.
Cheese Sauce Substitute cumin for ½ tsp nutmeg,
add in ¼-½ cup more water to thin sauce. Toss on
brown rice macaroni with lots of blanched veggies,
top with crushed cashews and bake for a plantbased macaroni and cheese.
