Mince pork through coarse plate mincer.
Place mince in mixing bowl, add water (Iced cold) and Special Pork Pie Seasoning.
Mix until all water has been absorbed by the meat.
Add rusk & mix until evenly distributed throughout the mix.
Weigh into portions for filling, equal weight of filling of pastry (including pie lids)
Allow pies to rest for 30 minutes after lidding.
Heat oven to 231⁰C and place in baking trays leaving small gaps between each pie.
Coat with Glazine (44334). Bake for 30-35 minutes (227g pies)
Remove from oven, glaze if desired. Allow to cool, to 24⁰C.
Jelly pies with NWF Jellic Seasoning (63234). Cool as quickly as possible.
Store at approximately 5⁰C.
