Sweet potatoes have been an important food throughout the history of this country. They are filled with nutrients for healthy eyes and skin, a healthy heart, and good digestion. There are many types of sweet potatoes. One common type is pale orange and dry, and another type is dark orange and sweeter. Keep sweet potatoes in a cool, dry place, but not in the refrigerator. Clean them well before cooking. Bake them whole with the skins on for extra nutrition. Sweet potatoes are a favorite during winter holidays. However, many recipes are high in sugar and fat. Here is a healthier recipe for you to try. Most of the sweetness comes from the sweet potatoes and a secret ingredient. Sweet Potato Casserole Can your family guess the secret sweet ingredient? 8 cups peeled, diced sweet potatoes 4 tablespoons unsalted butter/margarine ¼ teaspoon ground nutmeg 1 cup nuts (pecans, walnuts, almonds) 3 ripe bananas 2 tablespoons brown sugar salt, to taste Place the sweet potatoes in a medium saucepan and add water to cover. Cook with a lid on until the sweet potatoes are very tender. Drain the water. Cut the bananas into 1-inch pieces and mash them with a potato masher. Add the cooked warm sweet potatoes, butter, and 1 tablespoon of brown sugar. Mash and stir together. Add nutmeg and salt to taste. Heat oven to 350 degrees F. Pour the sweet potato mixture into a glass baking dish. Sprinkle with nuts and 1 tablespoon of brown sugar.
