“ Chilli - it’s either blood red or nature green.
But almost always loaded with spice. Cut and it
will sting. Taste and it will bite. But yellow
chilli??? I found that simply inconceivable. Till
one fine day, a few years ago, I discovered it on
the streets of Meerut, where my grandparents
and mother hail from.
As all connoisseurs are aware that Meerut is the
melting pot of unique chaats. The special
yellow spice mix that the chaatwallas used
here added that extra zing and brought
together a confluence of flavours, aroma and
colour.
I have been travelling the length and the
breadth of India in search of the unique tastes
and flavours of the various regions which have
provided the inspiration for many of my
recipes.
It took all but one bite for ‘The Yellow Chilli’ to
come into being. It is certainly not imaginary.
So go ahead. I am sure you will enjoy the
‘yellow’ taste”
