ART AT KÄFER
A key feature of our restaurant is the concept “Art at Käfer”. The placement of the paper
work of Balkenhol corresponds with its unique wooden sculpture which
is placed in the main room.

The carved and colored wooden figures of Stephan Balkenhol are world-famous and
distinctive. The core of his motifs are the human being, animals and imaginative hybrid
figures. The artist consistently diversifies men and women, shows them in neutral
clothing and peaceful gesture, but sometimes fancy staged and equipped with
unexpected attributes. In addition to his small sized wooden figures and wall reliefs for
the interior, the work of Stephan Balkenhol occupies also an important position for the
public space.

Our menu is a special blend of Bavarian tradition, French inspirations and the famous Käfer
Classics. Inspired by our regional and international suppliers, we offer a wide range of
innovative creations and tantalizing flavor experiences. Our passionate team creates
sophisticated dishes with strong character.
In line with our philosophy “the product is our star“ we chose four products which emphasize
the seasonal character of our menu and which we purchase from preferred premium suppliers.
Limousin Veal
The golden and red Limousin veal comes from the Limousin region, a low
mountain range location in the southwest of France, which is rather a rainy area
with harsh climatic conditions and infertile soil. Due to these environmental
conditions, the Limousin calves became very strong, healthy and adaptable. The
lack of natural resources led to isolation of this region and the farmers were able
to develop their cattle with little genetic influences from the outside. The
Limousin calf has evolved from a farm animal to a highly specialized cattle with
good muscles and low fat content and is now a international favorite among
connoisseurs.
May Plaice
The plaice is generally the best known representative of all flatfishes. It is mainly
caught in the North Sea, Baltic Sea and in the Arctic Barents Sea. The May
plaice is no separate genus or a special way of preparation. The name May
plaice derives simply from the spring months at which the juvenile plaices are
offered. The plaice is next to haddock and coalfish very protein-rich, fat poor
and provides valuable iodine. The May plaice has a very tender flesh and tasty
flavor.
Valrhona Chocolate
Valrhona is a French manufacturer of luxury chocolate. Established in 1922 by
the French pastry Alberic Guironnet from the Rhône Valley and located in the
small town of Tain l'Hermitage in Hermitage, a wine-growing region near Lyon.
Valrhona purchases the raw cocoa directly from carefully selected plantations of
the best cocoa-growing regions in the world. Therefore Valrhona is since many
decades one of the best and most reputable manufacturers of exceptional
chocolates and couverture chocolate.
White Asparagus
The subterranean matured snow whiting is one of the famous, seasonal sproutand luxury vegetable in this country. Asparagus is a monocotyledonous shrub,
which grows mainly subterraneously and which belongs to the family of lilies.
Especially the Asparagus officinalis is widely spread in our country.
In spring – as soon as the ground gets warmer - the asparagus plant pushes buds
out of the up to six meter long roots verticaly to the ground surface, to build
arboreal sprouts. These buds are suitable for the consumption and enjoying
great popularity.
