Super nutritious! So good! 2 T butter melted in sauce pan, add 1 onion chopped –fry in butter till soft, add 1 clove garlic, finely chopped, 2 t curry powder & 2 large parsnips, peeled/chopped into 1 cm cubes to onions for a couple minutes to release flavor. 750ml boiling water &1 stock cube -mix well. Simmer 15 minutes. Turn off heat and blend with a hand blender or food processor. Stir in 100ml double cream and warm up.
