yourself: sliced fennel

chicken breasts tough.
To keep them juicy,
try this method:
Pound breasts to about
1¼-inch thickness.
Season, lightly coat
with vegetable oil, and
let sit at room temperature for 30 to 60
minutes. Then, position
the chicken so the
thicker end of the
breast is over the hotter
section of the grill.
Flip chicken halfway
through cooking;
remove it once a meat
thermometer reads
160°F. Rest breasts
for 10 minutes, then
serve with a sauce

1. Fit a small saucepan with a steamer
insert and ﬁll with water just to bottom of
insert. Cover and bring water to a boil.
Add broccoli stalks, cover, turn heat to

Remove stalks to a work surface and

2. In a small bowl, stir together mayonnaise
and mustard, then evenly spread 2 tsp on
each tortilla. Scatter ¹/³ cup broccoli on top,
then top with a single layer of turkey and

Ingredients
• 12 whole chicken wings
• Salt and pepper to taste
Marinade
• 1 cup Greek yogurt
• 5 key limes, juiced
• 2/3 cup of brine from Farmer’s Garden® by
Vlasic® Bread and Butter Chips
• 1/2 bunch cilantro, chopped

Instructions:
1. Toss wings with salt and pepper. Set aside.

2. Whisk together all marinade ingredients and
pour over wings. Cover, refrigerate and let sit
for 6 hours.
3. Preheat grill to medium-high heat. Generously
brush grates with a ‘high temperature resistant’

excess and place onto the grill. Season with salt
and pepper.
5. Lower the heat to medium, cover and grill for 10
minutes. Uncover, fip and grill for another 10 to 12
minutes or until juices run clear.
6. Remove from grill and allow wings to rest for
about 7 minutes.
7. Serve with key lime wedges, cilantro leaves and
sprinkle of smoked paprika.

Layer each with 2 to 3 Tbsp pimiento cheese,
¹/³ cup cucumbers, and 2 Tbsp garlic yogurt.
Top with tomatoes, divided between jars. Close
jars and pack with a fork and bagel chips,
if desired.

Blueberry-Coconut Bars
1. Preheat oven to 400˚F. In a medium saucepan, combine cauliflower, onion, and broth;
cover and bring to a boil over high heat.
Lower heat to a simmer and cook, partially
covered and stirring occasionally, until
tender, about 10 minutes. Without draining,
place mixture in a blender and carefully puree
until smooth. Return to saucepan. Stir in
Parmesan and season with pepper.
2. Using flat side of a knife, smear garlic
and ¼ teaspoon salt together to form a paste.
Place in a small bowl, add butter, and
mash together with a fork; stir in parsley.
3. Using cookie cutters, cut bread into
shapes, if desired. Spread both sides of
bread with a thin layer of garlic butter,
then arrange on a parchment-lined baking
sheet. Toast until just golden on bottom,
4 to 5 minutes, then flip and toast another
2 to 3 minutes. Serve with cauliflower soup
for dipping.

Make sauce: Halve 6 tomatoes and grate on
large holes of a box grater, discarding
skins. Stir in 2 Tbsp olive oil, 2 Tbsp chopped
basil, 1 minced garlic clove, ½ tsp sugar,
and salt to taste; cook in a large skillet
over medium heat until thickened, about
25 minutes. Next toss 1½ lb chicken
tenders in ¹/³ cup all-purpose ﬂour, then
dip in 2 beaten large eggs and roll in
½ cup Italian-style bread crumbs mixed
with ¼ cup grated Parmesan. Heat a thin
layer of vegetable oil in a large skillet
over medium heat; add chicken and cook
(in batches if necessary) until browned,
3 to 4 minutes per side. Serves four.
CORNFLAKE-CRUSTED
WITH HONEY-MUSTARD SAUCE
Preheat oven to 375˚F. Finely crush 5 cups
cornﬂakes in a food processor; pour into
a shallow dish. In another dish, mix ½ cup
each mayonnaise and water, and ½ tsp
each kosher salt and pepper. Roll 1½ lb
chicken tenders in cornﬂakes, then dip in
mayo mixture and roll again in cornﬂakes,
pressing to coat. Place chicken on a rack
set on a baking sheet and bake 35 minutes,
until browned. Meanwhile, make sauce:
Stir together ½ cup mayonnaise, ¼ cup
yellow mustard, 2 Tbsp honey, and 1 tsp
lemon juice. Serves four.

Toss 1½ lb chicken tenders, 1½ cups buttermilk, and 2 tsp kosher salt in a bowl;
cover and refrigerate at least 1 hour. Meanwhile, make sauce: Stir together 1 cup
chili sauce, 2 Tbsp molasses, 1 tsp sriracha,
and ½ tsp soy sauce. Next mix 2 cups allpurpose ﬂour and 1 tsp each kosher salt,
pepper, and baking powder in a shallow
dish. Drain chicken and pat dry, reserving
buttermilk. Toss chicken in ﬂour mixture,
then dip in buttermilk and toss again in ﬂour.
Heat 1 inch vegetable oil in a deep, wide
skillet over medium-high heat until shimmering; add chicken in batches and fry,
turning occasionally, until browned, 6 to 8
minutes. Serves four.

cooking with my daughters.

set up an assembly line: They
dip it in the eggs, then the
seasoned bread crumbs, and
put it on the pan to bake. On
Sundays, we’ll read the paper
and pull out a recipe, or go
to the local farmers’ market
and make something inspired
by some ingredient. I’m not
fanatical about being a locavore, but I like them to have a
sense of where their food
comes from, and I like to cook
as much as possible.
Do you watch cooking
shows on TV? We like
Chopped. They’re so
matter-of-fact about diversity; last year there was
a trans[gender] contestant.
That’s the way I try to
present the world to my
daughters, as full of different
people. And they love
watching. They’ll be like,
“What flavor profile is this?”
It’s the funniest thing.

My family! I’d
have my mom and
her partner, my
brothers, my
sister and their
kids, and my
friend who’s a
food critic at the
Philly Inquirer.
He’s an amazing
cook. Every
summer he comes
to visit us in
Cape Cod. We go
fishing for stripers
or bluefish, or go
clamming, and
he’ll cook. He made
this paella one
year that I’m still
thinking about!

all over and we’d
have a feast.
