Small Scale Farming,
Strong Food System

News has just emerged from NASA
that California has 1 year of water left.
The vast majority of our fruits and
vegetables come from this single state
so what happens when the supply
chain runs dry? Even if we are able to
source food from elsewhere, we know
that conventional agriculture, which
produces the bulk of our meat, grains,
fruits and vegetables, creates almost
20% of all planetary greenhouse gases.
As we struggle to find solutions to
all of these issues, one answer may be
found in small-scale agriculture.
Small-scale farms tend to use smaller
machines and more hand-labour,
thereby decreasing carbon dioxide
emissions. In addition, they tend to
stock animals at lower densities, as opposed to confined animal feedlot operations
(CAFOs), where the methane emissions can be a huge problem. Small-scale farmers are
playing an integral role in moving towards a sustainable future that is less dependant
upon global trade and non-renewable resource extraction.
The Comox Valley is a great example of how a number of smaller farms can create
a strong, resilient food system. Walking around the Saturday Farmers’ Market, you’ll
come across a myriad of products from kohlrabi and turkey bacon to goat milk gelato
and pastured, organic eggs.
So are we not sitting pretty in the Valley?
Take a look around the farming community. Although we have a vibrant farmers’
market, it only represents a small subset of all of our farms. The vast majority of local
farms grow hay for animal feed and over half of all farmers are over the age of 55.
According to Statistics Canada, in 2011 only 25 farmers in the Comox Valley were 35
years old or younger. While older farmers can and do grow beautiful produce, vegetable
growing is physically taxing. The amount of squatting, bending, and lifting would put
any Boot Camp to shame.
The Comox Valley is blessed with a large
amount of arable land, over 30,000 acres. However, only less than 500 acres is in fruit or vegetable
production. Those who own land tend to be older,
closer to retirement than able to get into a new
venture. Luckily the organization Young Agrarians
is working on linking landowners with those
wanting to farm.
Finding the dollars to get into farming is another
matter. One way that consumers can support
farmers is by joining a CSA - Community Supported
Agriculture. Farmers offer a set number of weekly
vegetable boxes and consumers pay for the boxes
at the beginning of the season, when farmers need
the money to purchase seed and equipment.
Farmers are also working together to share
equipment so that each farm does not have to invest in a tractor or walk-in cooler.
Merville Organics is doing just that, supporting new farmers by sharing equipment and
markets that established farms already have.
Lastly, educational opportunities on the North Island are few and far between.
Farming requires a whole slew of skills from soil management to saving seeds, making
compost, breeding animals, and post harvest handling. For the most part, these skills
are shared between farmers. Farm apprenticeships through organizations like SOIL
provide new farmers with hands-on experience. The Young Agrarians hosted a number
of workshops back in March during a day-long skills sharing event. We need to support
more of these and ask our colleges, farmers institutes, and government agricultural
departments to step up to the plate.
Climate change, fluctuating fuel prices and an aging farm population are putting
everyone’s food supply at risk. Small scale farmers hold a major key in solving the issue
but they need the support of the entire community before we can say that the Comox
Valley has a safe, resilient food supply.

In addition, entrance costs into farming, even small-scale vegetable production, can
be quite dramatic. It’s estimated that to for each acre converted into vegetable production costs the farmer at least $10,000 in infrastructure costs. Irrigation equipment,
machinery, and greenhouses are a must in the Valley and prices can be quite high
compared to the mainland.
How do we encourage more farmers to get into production? Do we wait until the
crisis hits, where food prices go through the roof and allow market demand to create
the incentive for more people to farm? Even waiting for this scenario to happen will
require a number of lean years where little affordable produce will be available until
production can ramp up.
Or, can we as a community proactively encourage young people to farm? Studies
from other communities have found that new farmers require things: access to land,
access to capital for infrastructure, and access to training and education.

Get Your Fresh, Organic Produce Box Every Week!
Grown by Merville Organics Growers' Co-op
A CSA is a local, farm-based distribution
system for organic produce. It’s all about increasing community access to high-quality, locally
grown produce, but it’s also about farmer-eater
relationships. CSA members pledge to support
local farms, with growers and consumers sharing
the risks and benefits of food production.
CSA members or subscribers purchase shares
in the spring for a share of the anticipated
harvest. Once harvesting begins, from July to
September, members receive weekly shares of
fresh, in-season produce from the farms.
With Merville Organics Growers’ Co-op,
members receive tasty, nutritious produce from
all 5 farms.

Comox Valley Farmers’ Market on Headquarters Road, Saturdays, 9 am – noon.

• Members receive 14 weeks of organic
vegetable box delivery from the last week
of June to the first week of October
• Payment is given in late winter/early
spring to provide necessary start-up funds
for the farms
• Boxes are delivered to central pick-up
locations in the Comox Valley, or at one of
the farms once a week where members can
pick them up

Filo Pastry Pizza Recipe

Ingredients:
Pizza Crust:
Box of filo pastry (thaw first)
Olive oil (as needed)
Tomato Sauce:
1 small can tomato paste
Olive oil (equal amount to tomato paste)
Garlic (to taste, I use 3-4 medium cloves for a garlic supreme sauce)
Oregano or generic “Italian seasoning”
Salt and pepper to taste
Toppings:
Whatever your heart desires.
For the pizza pictured I used:
Organic Kale (Ironwood Farm)
Beautiful Eggplant (Fiesta Farms)
Asparagus
Sweet peppers
Mozzarella Cheese
Method:
Pre-heat oven to 350 degrees
Roast the vegetables (except the kale)
Slice eggplant into thin circles, brush with olive oil, season
with salt and pepper.
Lay the circles flat on a cookie sheet and roast in the oven
until tender.
Slice the peppers and chop the asparagus into bite size pieces.
Brush with oil, season and roast along with the eggplant.
Remove vegetables from oven when nicely roasted
While the vegetables are roasting.
Lay out eight sheets of filo on a flat cookie sheet brushing
each layer with olive oil. (I use parchment paper under the
first layer as it will help to slide the pizza to the cutting board
when done).
Pre-bake the filo until it reaches a light gold color then
remove from oven and allow to cool. This will ensure and nice
crispy crust.

Make the sauce:
Scoop the tomato sauce into a small bowl, add roughly an
equal amount of olive oil. Coarse chop your garlic and add it
to your oil and tomato paste along with the oregano. Stir
until well mixed.
Season to taste.
Spread the sauce evenly over the pastry making sure to get
as close to the sides and corners as possible.
Lay the vegetables out in an appealing way.
Coarsely chop the kale and spread over the vegetables.
Add some grated Mozzarella cheese over the top of
everything.
Sprinkle a bit more oregano then into the oven until the
cheese is nicely melted.
We ate this beauty paired with Blue Moon’s 2012 Sirius
Apple Cider. The crisp cider complemented the savory pizza,
garlic and all. Yum!

The Limited Theory of Nutrition

One of the pleasures of my work life is that
it allows me time to ponder on issues that
concern me and the world I live in. I have always
been curious and wondered if there is any one
thing that can pinpoint where a certain thing
began.
Sustainability has become a main topic of
concern. Not just locally but globally as well. How do we feed the world’s
people and why haven’t we accomplished it yet? I always find it helpful to
understand the history of something as I contemplate possibilities.

Food was subjective up until the time that. Atwater, a scientist, discovered a technique to quantify food. The calorie as a numerical expression of
food changed everything. The calorie is the measure of energy contained
in food, an amount sufficient to raise the temperature of a kilogram of
water by one degree. We now knew how much food was needed to
adequately fuel a human. Atwater declared the calorie would determine
the “food supply of the future”.

With the spring equinox, all this sun and good weather has got me
thinking forward to summertime; delicious seasonal fruits, bright and
plentiful vegetation, and refreshing swimming spots. Not to mention one
of my favourite activities; music festivals. The valley is rich with musical
talent, and there are always exciting musicians touring from around the
world; the scene is an eclectic mix that also represents the vibrant community
of the Comox valley.
Currently for a school project we have been asked to illustrate and
design two concert-for-a-cause posters of our choice. Designing for a
cause is something I feel strongly about. With so much self-absorption in
our culture, it is important to sit back and think of the well-being of
others; how we can lift each other up as a community using our talents.
We can also give a voice to those who cannot speak for themselves; BC’s wolf
population, for example, which is one of the causes I chose to support.
