R ani’s Mu!on Korma Cooking Time: 60 Minutes. Makes 6 Servings Ingredients 1 kg mutton, cubed 2 cardamom pods 5 cloves 1 cinnamon stick 3 golden shallots or 1 large onion 2-3 green chillies 1 tablespoon crushed garlic 1/2 tablespoon crushed ginger 1 chopped tomato ghee or vegetable oil 1 teaspoon Rani’s garam masala powder Salt to taste Fresh mint or coriander leaves for garnish Marinade: 1 1/2 cup plain yoghurt 1 teaspoon turmeric powder 2 tablespoons coriander powder 1 teaspoon cumin powder Red chilli powder, to taste Paste: 1 1/2 tablespoons white poppy seeds, soaked in warm water 5 -6 tablespoons grated coconut R ani’s Mu!on Korma Cooking Instructions Mix together marinade ingredients, add mutton and allow to marinate for about an hour. Using a processor or mortar and pestle, make a paste with the golden shallots, garlic, ginger and chillies. Make another paste with the poppy seeds and coconut, adding a little water if necessary. Heat a splash of vegetable oil in a large pan on medium-high heat, add whole spices, after a few seconds add shallot paste, cook for a few minutes. Add tomato and some salt and cook until it starts to disintegrate. Add marinated mutton and the marinade, allow to cook for about 45 minutes, stirring occasionally. Add the coconut paste, cook for five minutes, stir thoroughly. Add water if it seems too dry. Continue cooking until mutton is tender. Garnish with mint or coriander. .
