Idiot’s Kitchen Shopping List – Coconut Curry Baked Cod Recipe from www.idiotskitchen.com -‐ Adapted from A Teaspoon of Happiness 1 pound of cod or other flaky white fish – 6-‐8 oz. per person 1 teaspoon fresh ginger Fresh Cilantro (or parsley) ¾ cup coconut milk (regular works better than light) 1 teaspoon green curry paste* Salt & Pepper *Look for small cans of curry paste in the Asian market or grocery store. If green is not available, or you’d prefer a milder flavor, look for yellow or red curry paste. Leftover curry paste can be frozen in a ziplock bag for future use. Serves 2 as printed here but is easily expanded.
