The Premo range represents our vision of creating
wines with distinct personalities, wines which are a
direct expression of our unique terroir. Premo wines
communicate a new expression of our vineyard, an
evolution of style.
Premo Dry Riesling
Premo Dry Riesling is all about clean minerality, width
across the palate and a fresh crisp finish. Cloudy juice is
fermented in old oak barrels with wild yeats with a
small addition of botrytis selection given skin contact.
Premo Dry Riesling exhibits layered scents of lime and
elderflower with spicy cinnamon apples and an
intensely mineral palate.

Premo Riesling
Harvested in very ripe conditions for intense grapefruit
characters, Premo Riesling is noted for its vibrant
acidity and clean fruit flavours, again complemented by
an addition of noble selection giving an apricot richness
to a tight focused palate.
Premo Chardonnay
Typical aromas of nuts and fresh lemon zest with subtle
hints of clove and honey are followed by spicy
grapefruit and hazelnut flavours. Fermented on full
solids with wild yeast, there is no lees stirring or
malolactic fermentation. Low yielding old vine
Mendoza clone provides a generous mid-palate
supported by a lemony acidity giving structure and
mineral appeal.

Premo Pinot Noir
With an emphasis on texture and structure, Premo
Pinot Noir typically exhibits aromas of red berry confit,
cola and earthy complexity. The palate is defined by its
low pH and acidity providing an elegant palate with
stylish refined tannins. Again, natural yeast
fermentation of low yielding old vine fruit lends itself
to a ripe flavour spectrum with style.

Man har opnået stor respekt for sine vine på Pinot Noir
og Sauvignon Blanc druen. Også Chardonnay og Riesling
gør sig interessant her. Marlborough, som ligger i den
nordøstlige del af sydøen, udmærker sig ved at være den
tørreste og mest solrige region på hele New Zealand.
WAIPARA SPRINGS HISTORIE
Tilbage i 1982 plantede Andrew Moore og hans far Bruce
4 ha med chardonnay vin, dette har idag udviklet sig til
25 ha vinmarker.På disse marker har man idag udover
Chardonnay, Savignon Blanc, Riesling, Cabernet
Sauvignon og Pinot Noir samt nogle unge Merlot og
Gewürztrauminer som kun producerer meget små
mængder vin. Jorden i Waipara Springs er ideel til
dyrkning af kvalitetsdruer da der forfindes meget kalk.
Waipara Springs Winery går op ikvalitet og da man
dyrker alle druerne på egne marker har man god
mulighed for at følge druerne fra plante til flask. Man
investerer hvert år i nye tønder af fransk eg og vineriet
bliver løbende moderniseret med det nyeste indenfor
maskiner og udstyr for at kunne konkurrere med andre
vinhuse.
Her giver de meget kolde nætter en syre til druen som
ikke kan findes andre steder i verden. Marlborough er
den største vinregion på New Zealand med over 4.000
ha. (omkring 1/3 del af arealet for øen) Her modner
druerne langsomt, det giver meget rene frugtige hvide
vine.
WAIPARA SPRINGS VINE
The Waipara Springs range of wines are made in the
classic fruit driven style that New Zealand wine is
renowned for worldwide. With an emphasis on fruit
characters, these wines are a vibrant expression of the
vineyard.
Sauvignon Blanc
Freshly herbaceous with hints of passionfruit made in
the classic Waipara Springs style, salivating acidity,
fresh fruit flavours and a clean crisp dry finish. Great
chilled on a warm summer’s day.
Chardonnay
Chardonnay er på hele New Zealand den mest udbredte
hvidvinsdrue som byder på alt fra de tunge vine med
toner af honning og nødder til de delikate vine med spor
af eksotisk frugt.
Man definerer ofte vinen som frisk lime, vilde urter,
oliven, figen, grøn the, og melon. Alt dette får lige et
touch af eksotisk frugt som passionsfrugt, mango og
maracuja.
Riesling
Explosive mandarin spray aromas with the crispness of
fresh green apple, Waipara Springs Riesling is ideal as
an aperitif or, with its natural spritz and low alcohol,
perfect for a summer’s day.
Dry Riesling
Waipara Springs Dry Riesling is intensely scented and
exhibits aromas of fresh ginger and mandarin peel with
sweet notes of honey suckle. The palate is full and rich
with ripe citrus flavours and a crisp dry finish.
Chardonnay
Sydøen
Sydøen blev tilplantet med vin på samme tid som
nordøen, men først i 70’erne blev vinene herfra
accepteret af de forskellige vinmagere. Det er koldere
end på den nordlige del af New Zealand dels grundet det
meget kystnære klima.
Waipara Springs Chardonnay is refined and elegant in
style. Coming from the oldest ungrafted Mendoza vines
in the valley, it is a wine with great fruit expression,
textural qualities and concentration.
Pinot Noir
Grown on soils rich in limestone, Waipara Springs Pinot
Noir is a fruit driven style that expresses lifted floral
notes with red berry tones. This is a generous, vibrant
and youthful wine.
