VOTED BEST COSMETIC SURGEON ON LONG ISLAND FOR 2012!*
*Long Island Press
Now is the perfect time to consider the cosmetic surgery procedure
that you have been dreaming of, and look your best for the
upcoming Spring season. Diet and exercise are the best ways to
help stay healthy and keep in shape, but supplementing a healthy
lifestyle with cosmetic surgery procedures will leave you in the
best shape that you can be in… healthy and beautiful, both inside
and out!
Face-lift surgery is a cosmetic procedure that involves removing sagging skin and
tightening muscle tissue of the face and neck to counter signs of aging. A brow lift
(forehead lift) minimizes the creases that develop across the forehead, or those that
occur high on the bridge of the nose and improves frown lines or a low brow.
Skin rejuvenation procedures including Matrix IR™ Wrinkle reduction, IPL® Photo
Rejuvenation, Refirme™ Skin Tightening, Microdermabrasion and Chemical Peels are
all effective and can be used in combination with each other or with a surgical
procedure. Various injectable fillers are effective in reducing wrinkles and softening
facial creases and Botox™ is just one of the popular non-surgical ways to reduce or
eliminate frown lines, forehead creases and crow’s feet. It is the proper mix of these
procedures that guarantees a successful improvement in appearance and a significant
reduction in the signs of aging. It is most effective to combine a surgical procedure
with a non-surgical procedure to achieve the best and most significant results.
If you are looking for a non-surgical option the advanced Artisan Laser can easily
treat wrinkles, scars, acne, sunspots and so much more. It is the only FDA approved
machine to get rid of stretch marks.
Another avenue to consider for quick fixes are “injectables” which are quite
effective in reducing lines and wrinkles on the face, without surgery. Exciting new
products including Dysport ®, a wrinkle relaxer, and Restylane® containing lidocaine,
have expanded the market and increased the options available to people seeking
immediate results.
As you consider improving your appearance, remember you can easily achieve
a younger and fresher look. Another way to help improve your appearance and
reduce the signs of aging is to use Dr. Greenberg’s revolutionary skin care system,
Cosmetic Surgeon in a Jar™, specifically designed to reverse sun and free radical
damage, enhance elasticity and produce a younger look and a reduction in fine
lines and wrinkles.
Dr. Greenberg’s goal is to make his patients as happy and as beautiful as they
can be. He uses state-of-the-art technology to obtain the best and most natural
looking results. He turns back the hands of time in a caring, safe and supportive
environment. This is the perfect time to get back into your ideal shape. Remember,
the perfect cosmetic surgery package can help create the perfect you!
If you have a question for Dr. Greenberg, please e-mail him at [email protected] or

Good Advice
Breast Surgery Combined with Tummy Tuck and/or Liposuction
by Charlotte Rhee, MD, F.A.C.S., P.C.
Many of my patients come to me seeking help with the changes that can occur after childbirth. Following childbirth, a woman’s breast can grow to uncomfortable proportions or just the opposite can happen. A woman’s breast can
actually lose volume and shrink, resulting in the breast appearing “deflated.”
Additionally, a large number of women come to me seeking help with the
post partum changes of their abdomen. During pregnancy the skin and abdominal wall muscles are stretched. Following childbirth, the abdomen can
protrude and the skin can be loose or sag. In some cases, the abdominal muscles can be so
weakened that the individual may look like she is still pregnant. Despite daily workouts including
sit ups and crunches, a tummy tuck may be needed to restore these muscles.
ing breast reduction. Both groups of women want to have breasts that are proportional to their
body size with the most natural result possible. In certain situations, a breast lift is also needed
to tighten lax skin. The laxity can be the result of pregnancy or weight loss. When a breast lift
is needed, I utilize the lollipop scar technique. A breast lift procedure is very similar to a breast
reduction. The only difference is that with a breast reduction, breast tissue is removed.
Combined Breast/Tummy Tuck and Liposuction Procedures.
Many of my patients who have breast surgery also have other procedures performed at the
same time. This allows for one surgery and one recovery. The most common combined procedures performed by Dr. Rhee are breast surgery, whether it is a breast reduction or augmentation,
combined with tummy tuck, also known as abdominoplasty. For those patients

JACI CLEMENT
Executive Director, Fair Media Council
fairmediacouncil.org
Where did you grow up?
I grew up in Youngstown, Ohio, where the steel mills
closed when I was a little girl and if you wanted something different out of life, then you were forced to move. I
spent summers with my sister in Fairfax, Virginia. She put
me through Hofstra, which is how I came to Long Island.
Now I live in Centerport.
How has the focus of Fair Media Council changed in recent years?
FMC has evolved as consumers’ news habits have
changed. No one rushes home to the 5 p.m. newscast or
afternoon edition of a newspaper. At the heart of it, we
still advocate for quality local news as vital to the health
and well-being of the region. But we emphasize the need
for an educated news consumer – that’s something that is
needed more than ever in today’s 24/7 news cycle, and
something that becomes increasingly important as FCC
rules, in particular, favor corporate control of the media.
We’ve also expanded our reach into New Jersey, and
rounded out our program offerings to improve all facets
of communication skills for businesses and nonprofits.
Why is it important for children to be media-savvy?
Deductive reasoning and critical thinking skills develop in
children when they’re in 4th to 6th grade. Using news correctly, learning how to question, how to compare and
contrast information, and exposure to what’s happening
in the world all play an important role in creating not only
a generation that can think for themselves, but can become true world-class citizens. My father had me reading
the Wall Street Journal when I was in the fourth grade. His
reasoning was simple: If I understood business, I could do
whatever I wanted in life. That’s why we started the Media
Savvy Teacher Award program, to encourage 4th to 6th
grade teachers to use news in the classroom.
at Evernote is to give everyone the ability to easily

Lidia Bastianich
“Food gives us a
profile of who we
are as individuals
and families, and it
gives us security and
stability in our lives.”
by Debbi Honorof
Mention the name “Lidia” to just about anyone, and they know exactly who
you are talking about: Lidia Bastianich, master cook, author, TV personality,
entrepreneur,grandmother,restaurant owner,and a few dozen other titles.With
a deep passion for her native Italy – as well as a love for her adopted country –
Lidia has become one of the most visible spokespersons today for wholesome
home cooking, family and friends gathered around a table, and the joy of
bringing her favorite authentic Italian dishes to home cooks throughout the
world. Her newest book, Lidia’s Italy in America, co-authored with her daughter,
Tanya Bastianich Manuali, marries all these passions together, as she explores
Italian American communities across the country–Baltimore, Pittsburgh,
Chicago, New England, Philadelphia, New Jersey, California, Louisiana, Texas,
and, of course, Arthur Avenue in the Bronx, and more–and introduces us to
the business owners who have continued the culinary traditions of the “old
country.” The book is chock-full of mouth-watering recipes that use fresh,
seasonal ingredients, as well as stories about the Italian immigrants who
carried their rich culture across the ocean to America.
LONG ISLAND WOMAN had the pleasure of catching up with Lidia between trips to
promote her new book.
When did you first come to the U.S.?
I came to the U.S. in 1958 when I was 12 years old. We were brought here from
Italy by a Catholic relief organization. One of my first memories was driving from the
airport and seeing the skyline. I was just fascinated! From then on, I loved New York
and loved being here. I was amazed by Horn and Hardart. You put a nickel in the slot
and you took the food out. It was the first time I ever saw Jello! We were in New Jersey
first, then we moved to Astoria and from there to Long Island.
Have you always had an interest in cooking?
I was always involved in cooking. My grandmother taught me a lot. We made meatballs,
spinach, beans and potatoes. We even made our own wine. So for me, good flavors began
at an early age. I cooked for the family because my mother worked late. People loved what I
cooked, so I got a lot of positive reinforcement, which made me want to cook more.
When I was younger, I wanted to go into science or medicine, so I tried to save
money to pay for an education. One of my first jobs in Astoria was in Walken’s Bakery,
which was owned by Christopher Walken’s parents. I worked first as a salesgirl and
then started helping in back.
Why has cooking become so popular?
I think because cooking and the table equals nurturing and nourishment. Big business
tried telling us that they were going to make cooking easier. But modernization meant
that we were eating foods that were not nutritionally sound and didn’t taste as good as
home cooking. We were ruining the environment, ruining our health and losing control
over what we put into our mouths. When people began to realize this, they went back
to the basics and got greater satisfaction. People realize they are capable of cooking
wholesome meals without shortcuts. Consumers today are more educated.
You write that food is the blueprint of who we are.
Each culture has its own food that reflects its people, its ethnicity, its holidays and its
topography. Food gives us a profile of who we are as individuals and families, and it
gives us security and stability in our lives. Just as a tree’s long roots can sustain storms,
cultural traditions reinforce our family connections and our history. Everyone gathers
around the table, and is nourished both physically and emotionally.
How did Italian food become transformed in America?
I think what you are looking at with Italian food are two parallel roads: ItalianAmerican and traditional Italian. Italian American is the story of the immigrant coming
to America at the end of the 18th century and trying to cook the food that they knew
with what they found in their new country. When they couldn’t find the products they
needed, they substituted other foods and Italian-American recipes were born. Now
traditional Italian products are available, so if they have the ingredients and know the
techniques, they can recreate the traditional tastes and aromas of Italy.
What do you want people to learn from your television programs and cooking
demonstrations?
I encourage people not to relent and buy what the store or manufacturer wants
to sell you. Ask for organic and seasonal produce, shop often and cook as simply as
possible. Buy fresh products and traditional products.
Some of the food shows on TV that sensationalize the chef and the cooking process
make people think they can’t do it. Everyone can cook and cook well. Favorite flavors
come from simple, fresh, seasonal and local ingredients.
I had the pleasure of visiting Eataly, your Manhattan restaurant and market, several
times and loved it. How did the idea come about?
The actual concept was created by Oscar Farinetti in Turino. Eataly is a combination
of retail markets for fish, meat, vegetables, prepared foods and authentic ingredients.
Customers could buy the ingredients to cook at home or eat at one of the restaurants
in Eataly. There are cooking demonstrations and a cooking school. I went to Turino to
an event and then engaged my son and Mario Batali in the project. We wondered if it
would work in America … Well, it worked!
Do you listen to music when you cook?
I love music! I sing, I hum, I drink a glass of wine. I like classical and opera, but I also
like jazz. When I cook, I like music that harmonizes with what I am doing. Listening to
music makes food taste better!
Are your grandchildren learning how to cook?
My grandchildren are always with me, and always learning. We shop together and
cook together. When they were two months old, I would crush herbs into my hand
and have them smell it, so they started learning early.
I love your old Italian saying,“You are like chopped parsley – all over the place.” I think
that describes you … books, TV, restaurants. How do you do it?
It’s all about passion, commitment, never-ending excitement and a great team
of people around me–including my daughter and son. How could I possibly do
all of this without them? When you are really passionate about something and
have collected a lot of knowledge, you mentor, and in order to mentor, you have
to find willing receptors that also have energy. And then the joy and the passion
multiply! X
Tanya Bastianich Manuali
Lidia’s daughter, Long Islander Tanya Bastianich Manuali, co-authors books
with her mother, manages Lidia’s product line and serves as the cultural and
art consultant for the PBS series,“Lidia’s Italy in America.“ She holds a Ph.D in
Renaissance art history from Oxford and started Experienze Italiane, a travel
company that arranges food, wine and art tours to Italy.
What was it like growing up with Lidia?
It was terrific! First of all, she’s a strong, successful woman, so I had a wonderful role
model growing up. We always had a lot of great times around the table. Friends were
always invited. I would sometimes have 20 friends home from college in sleeping
bags, and she would feed everyone. I remember going to visit friends and their moms
would open cans of Campbell’s soup and make peanut butter and jelly sandwiches,
and I thought that was very cool. My mom would serve artichoke hearts and I was
embarrassed. Now, of course, I appreciate it.
Tell me about your studies in Art History. How did that passion come about?
It was because of my mom’s encouragement. We owned a restaurant, and she
worked from 6 a.m. to 1 a.m.. So she encouraged me to get an education and become
a University professor. Mom would drag us to Italy every summer, and we’d travel Italian neighborhoods and watch your mom connecting with her heritage?
It’s so much fun. I can’t think of a better traveling partner–except for when we get
around in a hot car to at least four restaurants a day. When you’re nine, it is not fun,
but you absorb knowledge and culture without even realizing it. I decided that I lost. We get along so well and have so many laughs. It’s amazing to watch her in

When Long Island Woman asked for a suggested menu for a romantic Valentine’s
Day dinner, Lidia generously provided a menu, but insisted on also providing the
recipes! All recipes are included in Lidia’s Italy in America.
Appetizer:
Crab and Celery Salad (Insalata di Granchio e Sedano)
1 1/2 cups thin bias-cut inner stalks of celery and leaves
2 large hard-cooked eggs, peeled and coarsely chopped
2 ripe medium tomatoes, seeded, cut in 1/2-inch pieces
3 tablespoons chopped fresh Italian parsley
3 tablespoons lemon juice
3 tablespoons extra-virgin olive oil
3/4 teaspoon kosher salt
1 pound jumbo lump crab meat, picked through for
shells
In a large bowl, combine celery, eggs, tomatoes and
parsley. Drizzle with lemon juice and oil, season with salt and
toss well to coat the salad with the dressing. Add the crab meat
and toss gently to combine, without breaking up the lumps of crab.
Main Course:
Chicken Sorrentino (Pollo alla Sorrentina)
4 (6-ounce) boneless, skinless chicken breasts, trimmed
1/4 teaspoon kosher salt
All-purpose flour, for dredging
7 tablespoons unsalted butter
3 tablespoons extra-virgin olive oil
2 small eggplant (about 12 ounces total), sliced lengthwise into 8 slices
1 cup dry white wine
4 slices ham (about 2 ounces total)
1 cup marinara sauce
6 ounces low-moisture mozzarella, thinly sliced
1/4 cup grated Grana Padano or Parmigiano-Reggiano
Preheat oven to 400 degrees F.
Slice open chicken breasts crosswise to butterfly. Season chicken with the salt.
Spread the flour on a plate. Lightly dredge chicken in flour, tapping off the excess.
18 r February 2012r-0/(*4-"/%80."/
Heat a large skillet over medium-low heat. Add 4 tablespoons of the butter and the
olive oil. When the butter has melted, add the chicken and lightly brown on both
sides, about 2 minutes per side. Remove chicken to a plate. Increase heat to medium
and add eggplant to skillet. Brown eggplant on both sides, about 3 minutes per side.
Remove to a plate lined with paper towels to drain.
Discard oil in skillet and set over medium high heat. Add the remaining 3
tablespoons butter. When the butter is melted, pour in the white wine and bring
to a boil. Adjust the heat so the wine is simmering rapidly, then lay the chicken
breasts back in one layer. Lay a slice of ham over each chicken breast. Dollop about 2
tablespoons marinara on top of each piece of ham. Drop the remaining marinara in
the spaces between the chicken to make the sauce. Layer the sliced cheese on top of
the sauce. Sprinkle the grated cheese over top. Bake until chicken is cooked through
and cheese is browned and bubbly, about 20 to 25 minutes.
Dessert:
Chocolate Soup (Zuppa di Cioccolato)
4 cups whole milk
1/4 cup all-purpose flour
2/3 cup sugar
Peel of 1 orange, in thick strips
2 tablespoons unsalted butter
1/2 teaspoon vanilla extract
1/4 teaspoon kosher salt
1 cup cocoa powder
Toasted brioche or plain cookies, for serving
Bring the milk just to a simmer in a sloped-sided medium pot (so the pudding will
not stick in the corners of the pot.). Ladle about ½ cup of the milk into a small bowl,
and whish in the flour to make a smooth paste. Whisk the flour paste back into the
hot milk until smooth. Add the sugar, orange peel, butter, vanilla, and salt, and bring
back to a simmer.
Pour the cocoa powder into a medium bowl. While whisking, gradually pour about
1 cup of the hot milk into the cocoa. Whisk until smooth, then whisk the cocoa and
milk back into the pot. Bring the soup to a simmer, whisking constantly, and making
sure you get into the corners of the pot. Let simmer until thickened, about 3 minutes.
Strain through a sieve into a clean pot. Serve hot in bowls, with brioche or plain
cookies for dipping.

Seven Ways Women Can Prevent a Stroke
Protect Yourself from a “Brain Attack”
In the U.S., nearly one in three women will die of heart disease or stroke, a
“brain attack” that occurs when a blood
vessel that carries oxygen and nutrients
to the brain is either blocked by a clot or
bursts. Cardiovascular disease kills one
woman per minute in the U.S., according to the American Heart Association,
representing 421,918 deaths — more
women’s lives than get claimed by
cancer, chronic respiratory disease, Alzheimer’s and accidents combined. In
fact, each year, 55,000 more women
die of stroke than men. Because stroke
is so common, it’s something all women
should be concerned about. Prevention
is key. Here’s what you can do to reduce
your stroke risk.
1. Know your risk level. Recently-updated American

had a heart attack or a stroke, or have
diabetes. You’re at risk if you smoke, have high blood pressure (greater
than 120/80), total cholesterol above 200, you’re overweight, don’t exercise and/or eat an unhealthy diet. You fall into the category of ideal
cardiovascular health if your total cholesterol is less than 200, your blood
pressure is less than 120/80, your body mass index is less than 25, you
don’t smoke, you’re physically active and eat a healthy diet. (Only one out
of more than 1,900 people evaluated fell into this category, according to
a circulation study by researchers at the University of Pittsburgh School
of Medicine.) Then, based on your risk level, talk to your doctor to determine the best preventive program for you and your heart. To learn about
the guidelines and risk levels, visit www.heart.org.

If you’re at high risk for stroke because you have diabetes, for example,
you’ll want to manage your blood sugar
closely. Diabetes is one of the strongest risk factors for stroke because high
blood sugar can damage blood vessels
over time, creating conditions ripe for a
stroke.
2. Stop smoking. “Smoking is a
major risk factor for stroke because
it increases blood pressure and the
tendency for blood to clot, both of
which are independent risk factors for
stroke,” says Lori Mosca, M.D., M.P.H.,
Ph.D., director of Prevention Cardiology at New York Presbyterian Hospital.
Women who take oral contraceptives
and smoke are at even greater risk for
stroke than women who don’t. To stop
smoking, don’t go it alone. To increase
your chances of success, get counseling
and use nicotine replacement or drug
therapy, if you need it.
3. Exercise your options. Get at least
150 minutes of moderately-intense exercise each week, such as brisk walking or 75 minutes of vigorously-intense
physical activity such as jogging or singles tennis. Exercising regularly is key for
a healthy heart and to help avoid weight
gain, which is common as we get older
because metabolism slows with age.
Obesity is a major risk factor for all cardiovascular disease, including stroke.
Nearly two out of every three women older than 20 are now overweight
or obese.
4. Eat to beat stroke. What’s good for your heart is also good for
the blood vessels that feed your brain. Center your diet around fruits,
vegetables and whole grains like oatmeal and whole-grain bread. Eat fish
twice a week, preferably fatty fish such as salmon. Limit salt to less than
1,500 milligrams per day. Cut out trans fats and keep dietary cholesterol
and saturated fat low by eating fewer fried foods, meat, packaged desserts, butter, cheese and other high-fat dairy products such as sour cream
and ice cream. Limit alcohol to one drink daily or less.
5. Know your numbers. Get a check-up to get the facts: What’s your

Seven Ways Women Can Prevent a Stroke
blood pressure, total cholesterol, LDL “bad” cholesterol, HDL “good”
cholesterol, triglycerides level, glucose (HbA1c), body mass index, and
waist circumference? How to do these compare to the ideal? High
blood pressure (140/90 or more) can up your stroke risk; 120/80 is
ideal. Optimal total cholesterol is less than 200; LDL — less than 160 is
ideal if you have ideal cardiovascular health or 70 if you’re at very high
risk; HDL — greater than 50 for women; triglycerides — less than 150;
glucose — less than 7 percent; your body mass index should be 18.524.9; ideally, your waist circumference is 35 inches or less. Try lifestyle
tactics to improve your numbers, such as changing your diet and losing weight. If that doesn’t help, talk to your doctor about drug therapy. Also, talk to your doctor before going on menopausal therapy.
Certain common medications, such as HRT, raloxifene or Tamoxifen
may increase the risk of stroke. If you’re considering going on any one of these, talk to your doctor
about your stroke risk and how you can minimize
that risk.
6. Talk to your doctor about aspirin therapy. The AHA guidelines
recommend daily aspirin use for women with heart disease, diabetes,
or stroke to protect themselves from future attacks, unless your doctor
tells you there’s a medical reason not to. For women age 65 and older,
low-dose “baby” aspirin may prevent heart disease and certain types
of stroke. Routine use to prevent heart attack isn’t recommended for
healthy women under 65 though.
7. Don’t ignore symptoms. A common one in women is atrial fibrillation — an irregular rhythm that causes one of the heart’s chambers not to
beat properly. A clot can develop because of abnormal blood flow, causing a stroke. If you notice that your heart develops the tendency to occasionally beat rapidly, than slow down, see your doctor. You might also
experience other symptoms like light-headedness or difficulty breathing.
A stroke from atrial fibrillation is preventable; blood-thinning drugs, such
as aspirin or warfarin (Coumadin) can help. O
